Here ya go sweetie....
Marinated Veggie Salad
1 cup Splenda or sugar
3/4 cup white vinegar
1/2 cup vegetable oil
1 tsp black pepper
1/2 tsp salt---bring to a bowl, remove from heat and let cool.
6-7 cans your favorite veggies- drained and rinsed
(ex. Kidney beans, green lima beans, black-eyed peas, tiny tender field peas w/snaps, green beans, carrots and white shoe-peg corn.)
1 Green pepper - chopped
1 Onion - chopped
Drain & rinse all canned vegetables-add to large bowl and stir in green
pepper and onion.
Pour vinegar, sugar & oil over veggies - stir again.
Cover and chill at least 8 hours----

Have you ever tried making bbq (for sandwiches) out of left over turkey? You shredd some of the turkey, place it in a nonstick skillet, to this add ketchup, bbq sauce, a dash of lemon juice and a shake of hot pepper (to taste). Pour some diet coke over this, the amount depends on how much turkey you are using. I usually start out with 1/4 cup (you can always add more) and stir. Turn stove on med heat, once mixture begins to bubble, turn down the heat just a little and let simmer for about 20 minutes or until bbq is nice and thick. Don't worry about shreddign that meat very fine, it will do it on its own as it cooks. (just try not to use any really large pieces of meat). It is really pretty good! I am sorry I don't have measurements for the ingredients. I just "eyeball" it. I have made this for years with left over chicken, turkey adn pork roast.
