HOLY SMOKE- (the way my Maw Maw used to do it but adapted to make weight loss friendly)


Ingredients

  • 1 cup flour
  • 3/4 cup butter
  • 1/2 cup pecans
  • 1 teaspoon splenda
  • 8 ounces light cream cheese
  • 1 cup splenda
  • 2 packages  sf chocolate pudding
  • 3 cups  skim milk
  • 1-16 oz   light or sf coolwhip

Directions

  1.  
    1st layer

    cut together, flour, butter, pecans, splenda . Make like pie dough and press into a 9X13 baking dish, bake 15 minutes at 350 degrees.

    cool.

    2nd layer

    mix together cream cheese, 8 oz. cool whip and splenda
  6.  
  7.  
    Pour over first layer.

    3rd layer
  9.  
    2 pkg sugar freee chocolate instant pudding  made with 3 c  skim milk, pour over 2nd layer.
  10.  
    4th and final layer
  11.  
    Spread rest of coolwhip on top and sprinkle with nuts

i love this stuff. my dad requests for me to make it every year and bring to his Christmas. Little do they know i make it SF.

I make something similar to this.

1 box s/f vanilla wafers, crushed
1/4 stick butter, melted
1/2 cup chopped pecans
1 box s/f chocolate fudge pudding
1 1/2 c ff milk
1 container of sf cool whip

Mix crushed wafers, butter and 1/4 cup pecans. Press into the bottom of a 9X9 baking dish (or pretty servign dish). Mix pudding and milk, allow to become thick and fold in 1/2 of cool whip. Pour this over crust, top with remaining cool whip and garnish with remaining chopped pecans.

It is really good. I jsut leave out the cream cheese layer to save on calories. You can also add a scoop of protein powder to the pudding mix. No one ever knows its there (except the cook..teehee).
