Goodness, it has been a busy morning already. We are having our Thanksgiving lunch at work today. I am cooking chicken and dressing and a Chrystal Light Lemonade pie. I made my dressing last night, I just had to get up this morning and put it in the crock pot to transport to work and cook there. I made the pie this morning. Some of the girls are making desserts with splenda but I always like to carry a no sugar added or sugar free dessert as well. We are having a feast. Turkey, chicken and dressing, sweet potato casserole, mashed potatoes, corn, green beans, baked beans, rolls, cranberry sauce, ham, slaw, no sugar added chocolate chip pie, no sugar added pumpkin pie, chrystal light pie, pumpkin roll, homemade chocolate covered cherries, and strawberry crunch. I think that is all. I know it is more than enough. Goodness gracious, if you guys are in the area at lunch time...come on by. We have plenty...lol!!!

I am sure we will. I have my lunch already planned out. I will be having green beans & turkey (and maybe some cream corn)!! My faves!!! I will also have a piece of my lemonade pie. I am having a boiled egg and a piece of colby jack cheese now.  When I over eat, I fall asleep for a couple of hours (carb coma). Can't have that happening here at work!!!

My office Thanksgiving Party is tomorrow.  FULL BLOWN EVERYTHING you can think of...and there are great cooks in this office.  Gonna TRY to be conservative.  But, like I posted in my pre-surgery question...this IS the last Thanksgiving I'll have before WLS!!!!!  Where did you get teh Crystal Light Pie recipe?  Can you share it with us or direct me to a link?

It is a recipe a dietician gave my grandmother when we found out she has diabetes.

1 large box s/f vanilla pudding
1 pk lemonade chrystal light (the pk for a 16 oz bottle of water)
2 cups ff milk
1 sf cool whip
1 graham cracker pie crust

Mix the chrystal light with the milk, add the pudidng mix. Allow this to become thick (it will only take a couple of minutes because you are not using the full amount of milk called for on the box). Fold in the cool whip and place in the pie crust. Allow to set in frig gor about 2 hours before serving.
