Chocolate Delight

Holidays are almost here. Wanted to share my Chocolate Delight Recipe with you.

Chocolate Delight

1 box sf vanilla wafers, crumbled
1/4 cup melted butter
1/2 c chopped pecans
1 small box chocolate fudge sf pudding mix
1 1/2 cups skim milk
1 container sf cool whip

** For a added boost, stir a scoop of protein powder in with the pudding. Guest will never know.

mix wafer crumbs, melted butter and 1/4 cup pecans together and press into the bottom of a 9X9 dish. Mix pudding with 1 1/2 cups of milk. Allow to become thick. Fold in about 1/2  the container of coolwhip. Spoonover wafer mixture. Top with remaining coolwhip. Sprinkle with remaining nuts. Store in fridge. Best to make 3-4 hours before serving.

It is really good and a nice light version of some of the more high calorie, loaded with sugar treats that will be running around. I know it is not exaclty "good for you" but is better than some things that will be offered. Hope you enjoy it.

my mother makes something like this. but it has one more layer. it has cream cheese and splenda under the pudding. Its delish.

My original recipe calls for cream cheese. I omit that layer to cut back on calories. You really don't miss it.

you can get the 1/3 less fat  or fat-free cream cheese and it is just as good and you get more protein.

Thanks for the reminder about the cream cheese/ I use the 1/3 less fat when I cook with cream cheese. I like this recipe without the cream cheese layer. It is so light and fluffy.

does that not cause any of you to dump?  any time i try to eat sweets even slenda or sf stuff, i get that hot feeling and feel like i coudl pass out

Unfortunately, it does not bother me. I am sure if I ate too much I would pay my dues, but I only eat a little at a time.
