He is selling sausage and such. They are a local company that has been in business since 1971 in Chickasaw...right up the road from us. They make their own sausage and they sent home a packet of different sausages for him to familiarize himself with. I know he has fried some and last night we had red beans and red hots...yum yum! We also have some Andouille...and hickory smoked (kind of like Conecuh) and a tube of Garlic Bologna.
I am looking for recipes for these different sausages. I found a couple of differnt ones for Bologna...none for Garlic Bologna...but I figured it could be substituted for most. I know most people eat bologna cold or fry it for sandwiches...I was just hoping to find a hot meal with it since the weather has cooled.

This one is mine and it might sound ewe but it is good Dice your Bologna and brown it in 1/4 of cooking oil add a can of Sour Kraut and let simmer for about 15 min .Salt & pepper to taste You could also use the Garlic Bologna also.
Another is take a slice of bologna and lightly brown one side then scoop on some mashed potatoes on the top and top with Cheddar Cheese microwave just enough to melt cheese.
As I say these are my concoctions

Thanks for replying. Not a real fan of Sour Kraut, but the one with the mashed potatoes and cheese sounds interesting!!!

I don't have any recipes for garlic bologna, but......how about some SALMON??? PTL you DH has a job. I, like Vickie make what my hubby calls bologna boats......my MIL fries hers, I bake mine till it bowls up and makes the "boat", fill with creamed potatoes and top with cheese. The kids loved that growing up and my husband STILL likes it. I guess you could do that with garlic bologna. I don't think I've ever had the garlic kind before. Now, if you want some SALMON recipes, I'll go diggin' some up for ya.
