Chocolate Crunch

My hubby and my mom both have a birthday today. I have been cooking all afternoon since we got in form church. I am about pooped, especially since staying up with grandmother until 2a. Anyway, we are having a birthday supper tonight at our house for anyone who can make it. I made a homemade coconut cake last night as well as a chocolate crunch. Just had to share the recipe with you all.

Chocolate Crunch

1 box sf vanilla wafers, crumbles
1/4 c butter
1 box sf chocolate fudge pudding mix
1 1/2 cups milk
1 container sf coolwhip
1/2 c chopped pecan


Crumble vanilla wafers into semi course crumbs. Melt butter, pour butter over wafer crumbs, adding 1/4 cup pecans. Mix well and mash into the bottom of a 9X9 square baking dish and set aside. Mix puddign and 1 1/2 cups milk. Allow to set a few minutes to become thick. Fold in about 1/3 of the container of cool whip. Pour pudding mixture over wafers. Top with cool whip. Sprinkle remaining pecans over cool whip and drizzle with a small amount of Hersheys sf chocolate syrup (for garnish). Best if made 3-4 hours ahead of time (even bettter if made the day before).
***Note: I sometimes sneak a scoop of unflavored protein powder in the pudding and no one ever knows...lol.

I know this is not a healthy recipe but my mom, grandmom and hubbies grandmom are diabetics and it gives them something sweet and yummy without the sugar.

Phyllis...this sounds awesome.  Could you use skim milk in the recipe??  I am gonna try this.  Thanks so much!!!!

Skim or Soy milk either one will work. It is AWESOME....lol!

This sounds heavenly.  I would use skim milk in mine though.  It works just as well. It's all I ever use.  Yummmmy,  I think I have every ingredient in the house to make this.
