Anybody been COOKIN' lately?
I haven't. I know how disappointed ya'll are in me. LOL Kyle and Jill have worked every night this week and I've worked the after school program at work all week long, so I've been late getting in myself. I've mostly just eaten yogurt and protein bars....at least I'm not eating bad stuff. The worst thing I've eaten this week are those gummy type fruit snacks from Sam's. I've become addicted to them....well, not really, but I sure do like 'em and they're not too bad sugar-wise. I could be doing A LOT worse, I know. Christian loves them too, now that he has a mouth full of teeth. He loves those things and they are much better for him that the sugar loaded gummy bears. He's learned to drink juice from juice boxes now too. He came and stayed with me at school this afternoon and the after school teacher gave me one to give him. HE LOVED his apple juice in a box. I'm going to have to get him some of those to keep on hand when we are out and about.
I don't have a clue what I'm going to cook this weekend, but I better start thinking up something fast. I need to take something out of the freezer tonight or in the morning. Not sure what all is in there, but it ain't much. I know I have whole chicken breasts and ground chuck. Any simple, easy ideas or suggestions would be appreciate. Send 'em on my way.

All I have been doing is baking bread lately. I am talking at least 4 loaves a day. I do things like that.....get on a streak. My friends and coworkers all love me for it though. Kind of having a hard time cooking lately after my DH has had the gout flair up. trying to avoid cooking the things that are known to trigger it
I've been looking for that chicken crock pot recipe that was posted a few weeks (month) agao. It had bonesless chicken breasts, LF cream cheese, LF Cream of Chicken Soup, etc. If someone recognizes what I am talking about, PM me with the recipe. It was good and I want to cook it again but can't find the recipe. Also, I want to share it with someone else too.

3 - 4 Boneless/Skinless Chicken Breast
1 pk lowfat cream cheese, room temp
1 can reduced fat cream of chicken
1 pk dry Italian Dressing Mix
Rice or pasta, optional
Spray crockpot with nonstick cooking spray. Mix cream cheese, chicken soup and dry italian seasoning. Pour 1/2 of mixture into crockpot, place chicken on top and cover with remaining soup mixture. Cover with tin foil, place lid on pot and cook on low all day. When ready to serve, fork shredd chicken and stir well. May add cooked pasta or cooked rice at this point or serve without it, it is good either way.
Hope you enjoy it. Someone told me that you can use dry ranch in place of the dry italian but my hubby doesn't like ranch so I haven't tried it that way.
We cooked it with the Ranch and it was really good.

I am back to making my own bread in the bread machine. I use the regular bread machine recipe, but substitute homemade yogurt for the liquid and milk, olive oil for the butter, and
Splenda blend for the sugar. Then I add fresh rosemary from my yard. The bread is wonderful and it so much better for you than what you can buy.
I also have made my corn chowder....I don't know what portions I use, I just throw in some silver queen corn, diced potatoes, one diced onion, and a can of chopped green chiles. Let that coo****il the potatoes are soft, then add a can of cream of chicken soup. Stir and heat through. Put in bowls and add a little cheese on top for extra protein. I serve that with the rosemary bread....good and warm in this rainy weather.

Last week I made Shelly's (EggFace's) Southwestern Lasagna. Super yummy! :)
