OT: Mason's Garden

Cristy!!  Hey girl!  It isn't looking so great today! 
We had NO idea that the eggplant would take on so well, so it has taken over the garden. Well, the tomatoes too, but we can't get them before the critters do!! Right now, there are about 15 TINY green ones on the vines, but they aren't ready to pick!  lol

I can't see the pictures, but did check your profile and sawa picture of Mason with an eggplant posted there.  His adopted grandma is very proud of him and his horticultural skills.  (His adopted aunt would be very proud too, she has a masters in horticulture.)  His eggplant are bigger than the ones his adopted grandpa is picking.  George's Japanese eggplant are producing better than the globe shaped ones.  So, how are you cooking them?  We're picking okra, an occasional plum tomato, a few bell peppers, and a variety of green beans that do fairly well in this heat.

We have fried the eggplant and also made eggplant parmesean (sp?)

YEAH!!!   Accessing from home I can see the fruits of Mason's labor!  Very impressive!  Have you tried grilling slices of eggplant?  Slice about 1/4 - 1/2 inch thick, brush with low fat Italian dressing and grill on Foreman type grill or broil (bu****ch closely as they will burn), turn and broil on other side.  You could also brush them with olive oil and sprinkle with salt and pepper.  George likes to use garlic powder and sprinkly parmesean cheese on them.  My favorite way to cook eggplant is to cook some ground beef until no longer pink, add finely chopped onion and garlic, coo****il onion is transparent, then add peeled, cubed eggplant and coo****il the eggplant is falling apart.  Add salt and pepper or whatever all purpose seasoning you use.  I use Tony Chachere's Creole seasoning on almost everything.  Another idea is layer slices of eggplant with meatsauce and cheese for an eggplant lasagna (sp).  Just some suggestions!
