Tater tot casserole is in the oven along with eggplant parmesean. Mason has his own garden this year and that was his first vegetable!!!!  I took pics of him with his first eggplant! I will try to post one later tonight. He is so proud.

He is growing tomatoes, banana peppers, and eggplants.  Ohhhh and sunflowers too! His carrots didn't turn out.

Hugs!

I'm so proud of Mason.  My zuchini are over a foot to 2 feet long!!  I have watermelons growing and also bunches of tomatoes.  I didn't plant the garden.  It was planted and the owners had to go to Virginia for the summer and won't be back till September.  The gave me anything that grows.  I'm so blessed!  Tell Mason I'm gonna pray his maters grow bigger than anyone else's!  HEHEHEHE Even mine.  Pryaing for you Lindy!

Yeah Mason!  Just like his adopted grandpa!  George is still picking eggplant, bell peppers, and a type of green bean.  Tomatoes and corn and finished, okra plants coming along nicely.  George has trouble with carrots too.  They turn out small and deformed.  Try grilling the eggplant brushed with a bit of olive oil and sprinkled with seasonings or brush with Italian salad dressing.  Great on a George Foreman type grill or broiled.  Heck, I've even cooked it in a nonstick frying pan.  Nothing wrong with eggplant Parmesan, I've got an easy recipe for it, no frying the eggplant slices, just layer the sauce, eggplant, a little seasoned bread crumbs, and cheese, kinda like lasagna.
