15 Minute Wraps ~ Mexican Style

Turkey, Bacon and Guacamole Wraps

Wrap up dinner in 15 minutes with a cool turkey, bacon and "guac" sandwich.

Prep Time:15 min
Start to Finish:15 min
Makes:4 wraps

1 ripe avocado, pitted, peeled and mashed
1 tablespoon Old El Paso® taco sauce
1/4 teaspoon garlic salt
4 Old El Paso® flour tortillas for burritos (8 inch; from 11.5-oz package)
8 oz thinly sliced cooked turkey
8 slices packaged precooked bacon (from 2.2-oz package)
4 leaves romaine lettuce
1/4 cup drained roasted red bell peppers (from 7-oz jar), large pieces cut up

1. In small bowl, mix avocado, taco sauce and garlic salt. Spread about 1 tablespoon on each tortilla.
2. Top tortillas with turkey; spread with any remaining avocado mixture. Top with bacon, lettuce and bell peppers.
3. Fold in sides of each tortilla; roll up. Cut each in half. Serve immediately, or wrap each sandwich in plastic wrap, then refrigerate until serving or up to 24 hours.

Adobe Chicken Wraps

Have leftover chicken? Wrap up your dinner dilemma with a few extras you probably have on hand.

Start to Finish:10 min
Makes:6 wraps

1 1/2 cups chopped cooked chicken
1/2 cup Old El Paso® Thick 'n Chunky salsa
1 can (15 ounces) black beans, rinsed and drained
1 can (7 ounces) Green Giant® Niblets® whole kernel corn, drained
6 spinach or regular flour tortillas (8 to 10 inches in diameter)
1/3 cup sour cream
  Additional Old El Paso® Thick 'n Chunky salsa, if desired

1. In medium bowl, mix chicken, 1/2 cup salsa, the beans and corn. Divide chicken mixture among tortillas, spreading to within 2 inches of bottom of each tortilla. Top each with sour cream.
2. Fold one end of the tortilla up about 1 inch over filling; fold right and left sides over folded end, overlapping. Fold remaining end down. Serve with additional salsa.

Burrito BLT Sandwiches

Here’s one easy-to-eat BLT. It’s all wrapped up in a flour tortilla.

Prep Time:15 min
Start to Finish:15 min
Makes:6 servings

8 slices bacon, crisply cooked and crumbled
2 cups bite-size pieces lettuce
1 1/2 cups shredded Cheddar cheese (6 ounces)
1 large tomato, chopped (1 cup)
1/3 cup mayonnaise or salad dressing
6 Old El Paso® flour tortillas (8 inches in diameter)

1. Toss all ingredients except tortillas.
2. Spread one-sixth of bacon mixture on each tortilla. Fold up bottom third of each tortilla; roll up to form cone shape with folded end at bottom.

Refried Bean Roll-Ups (lighter recipe)

Lighten up! You can enjoy great-tasting seasoned refried beans, lettuce and cheese in soft flour tortillas and still keep an eye on the fat.

Prep Time:10 min
Start to Finish:15 min
Makes:4 servings

1 can (16 ounces) Old El Paso® fat-free refried beans
1/2 cup Old El Paso® salsa (any variety)
1/2 teaspoon chili powder
8 fat-free flour tortillas (8 to 10 inches in diameter)
1 cup shredded lettuce
1/2 cup shredded Monterey Jack cheese (2 ounces)

1. Mix beans, salsa and chili powder in 1-quart saucepan. Heat over medium heat about 5 minutes, stirring occasionally, until warm.
2. Spoon about 1/4 cup of bean mixture onto center of each tortilla; spread slightly. Top with lettuce and cheese. Fold over sides and ends of tortillas. Serve with addiditional salsa if desired.

I have tried only 2 of these and they are Yummy arent they!  With the heat I figured I would share some of my QUICK FIXES....LOL!   How are you and Maxie doing today?  I have been thinking about ya'll.  I am so sorry to say that we have no more squash, but we have a ton of Maters.  Maybe soon things will get back to normal and we can get together!  Love ya bunches my friend!
