Tomato, Bacon and Cheese Quiche

1  unbaked deep-dish pie shell (9 inch)
4  slices bacon
1/2  cup chopped red onion
3  eggs
1  cup heavy whipping cream
1  can (14.5 oz each) Hunt's Petite Diced Tomatoes, drained
1  cup shredded Cheddar cheese (1 cup = 4 oz)
1/3  cup thinly sliced fresh basil

  1. Preheat oven to 375F. Pierce bottom and side of pie shell with fork. Bake 7 minutes.
  2. Meanwhile, cook bacon in large skillet over medium-high heat until crisp. Remove bacon from skillet, reserving 1 tablespoon of the drippings in skillet. Drain bacon on paper towels. Add onions to drippings in skillet; cook and stir until tender.
  3. Beat eggs and whipping cream in large bowl with wire whis****il well blended. Crumble bacon. Add to egg mixture along with the onions, diced tomatoes, cheese and basil; mix well. Pour into pie shell.
  4. Bake 55 minutes, or until knife inserted in center comes out clean. Let stand 10 minutes before cutting into 6 wedges to serve.

I saw this and had to make it. Of course I couldn't have all those calories so I  used Calorie Countdown milk and  and low fat cheese.Since I don't eat pie crust I used a casserole dish. It turned out real good. I'm glad I liked it since I'll be eating it for a while. Thanks for posting it. Love, Miss Mary
