Easy Chicken Quesadillas
Just wanted to share what we had for supper. Things have been really busy here so I have been tryign to make quick fix (yet still good for ya') suppers. Here is what we had tonight:
Easy Chicken Quesadillas
1 med bell pepper, cut into strips
1 med sweet onion, cut into thin strips
1 packeage Tysons Southwaestern Chicken (in the bag, found in the meat dept of most grocery stores)
1/4 tsp cumin
1 cup shredded cheddar (or your fave cheese)
1 package tortilla shells
Spray a nonstick skillet w/pam. Saute onion and peppers until tender, add chicken strips (torn into bite size pieces) and the cumin. Heat over medium heat, stirring often until heated well. Place tortilla shell on a medium heat griddle , sprinkle a little cheese and top with a generous spoon of the chicken mixture. Fold Tortilla shell in half and heat until cheese is melted and shell is hot. Slice into tiangle and serve with salsa and lf sour cream. Refried beans ore good on the side as well!!
Hope you enjoy these as much as we did. This recipe woudl also make great fajitas by simply adding some chopped tomatoes, just before removing from heat and a squirt of lime juice!!
