What are you COOKIN'/EATING today???

For breakfast I got up and cooked whole wheat pancakes and bacon.  It's been a LONG time since I've actually cooked breakfast....other than fast stuff.  I made these from scratch and they were good.  I had SF Mrs. Butterworth's on mine.  Just a tad, I don't like a lot of syrup. For lunch,  Jill grilled and bbq'd porkchops on the grill and also grilled some yellow and zuccini squash.  Cut and sliced longways and kinda thin.  It was really really good and the first time we've ever done squash before.  We've just been given an abundance of squash latey so I was trying to figure something new to do with it.  We've had it fried, boiled, baked and casseroled....now grilled too.  Yum.  I made some baked beans and a fresh garden salad too.  All I ate was some grilled squash and a few bites of baked beans.  I will eat my salad later and I really can't do porkchops, so Jill and Kyle will get to enjoy those later.......

So, what are you cooking today???  Eating???  Please share...

Well, since my bottom cabnets got torn out yesterday in my kitchen, we have no water in the kitchen, so we went out to eat mexican after church this morning.  I ordered single order of fajitas so I'll have the rest tonight for supper (and lunch several days if my boys don't get into it)  they'll have a sandwich or something tonight after church.  Whatever we use has to be able to get washed in the bathroom so we're trying not to mess up too much.  Hopefully our new cabinets will be installed by Tuesday.  Eating out is getting expensive!

We had a huge breakfast of scrambled eggs with potatoes O'Brian.  My uncle had given me some potatoes and onions...so I baked them in the microwave and then browned them with some onions, green peppers, and a little bit of bacon in the skillet.  We also had fresh tomatoes, also a gift of the same uncle. Now, I guess we will have chicken and dumplings for lunch/supper with fresh tomatoes and some yellow squash.  I don't usually cook chicken and dumplings, so what do you all serve with them?

Thanks Ellen, I looked it up on the internet and some suggestions were cornbread, mashed potatoes, squash, lima beans, and a bunch of other starchy veggies.  I think I will stick with just dumplings and maybe some fresh squash and tomatoes ....that seems like something that might cut the starch....Neither of us needs to run our blood sugar up too high...thanks.

We usually just have chicken and dumplins and sometimes we will have kraut and weiners too.  That's the way my Mama and Daddy always did when they had chicken and dumplins. When are you coming HOME???

We are having Italian Beef....YUM!!!! Gotta love those crockpot recipes, especially when it is hot out.  Our kitchen is on the west side of the house so we get all the evening sun. It heats the kitchen up and when I turn on the stove...man oh man, we melt!

Is this the one???   I love this one , but my family doesn't care for it.  :( Crockpot Italian Beef

INGREDIENTS

  • 1 pound thinly sliced roast beef
  • 1 (.7 ounce) package dry Italian-style salad dressing mix
  • 1 (16 ounce) jar pepperoncini, sliced
  • 1 (10.5 ounce) can beef broth

  1. Combine roast beef, dry dressing mix, pepperoncini and beef broth in a large pot or slow cooker. Cook over medium-high heat until hot, 15 to 20 minutes.
