Mexican Chicken Salad
This recipe was in yesterdays newspaper. Just wanted to share it with everyone. I plan on trying it soon!
Mexican chicken Salad
1 pound b/s chicken breast, cooked and shredded
1 cup salsa
2 hard-boiled eggs, finely chopped
1/2 low fat sour cream
1/4 cup light mayonnaise
2 tbsp finely chopped onion
1 tsp grated lime peel
1/2 tsp chili powder
1/4 tsp cumin
lettuce leaves
Combine all ingredients except lettuce leaves. Mix well. Serve over lettuce leaves.
Makes 4 servings (or 8 for us..lol)
