More Yum Yums! (Mexican Dishes)

Boy oh boy is my recipe book agrowing!  Ya'll are posting some really yummy sounding goodies, and I am saving the recipes!  Thanks for posting, cuz I sure get tired of the same old stuff. Ever since Karla shared her yummy Mexican dishes I have had Mexican food on the brain so I thought I too would share a few recipes.  I hope ya don't mind Karla!  Here they are:

Spicy Shrimp Recipe Shrimp Veracruz  Ingredients for this spicy shrimp recipe:

* 1 lb fresh shrimp * 1 Tbsp oil * 1 small onion, chopped * 3 tomatoes, peeled, chopped * 1-1/2 tsp capers * 1 bay leaf * 1/2 tsp sugar * 1/2 tsp salt * 1 large green pepper, cut into strips * 2 Tbsp oil * 2-3 Tbsp lime juice * 1/3 cup minced cilantro

Directions: Peel shrimp, slit backs and remove veins. Refrigerate. Sauté onion in 1 tablespoon oil and coo****il tender, but not browned.

Add tomatoes, capers, bay leaf, sugar and salt. Bring to boil; reduce heat. Cover and simmer 15 minutes.

Add green peppers and cook 5 minutes longer. Heat 2 tablespoons oil in another skillet. Add cleaned shrimp.

Cook over medium heat until pink. Sprinkle lime juice over shrimp. Add the sauce and heat 3-4 minutes longer. Top with cilantro and serve immediately.

Tamale Pie Recipe Ingredients for tamale pie recipe: * 1 pound of Hamburger * 1 Large can chopped tomatoes * 1 Can Creamed Corn * 2 small cans of Tomato Sauce * 2 Cups of water * salt and pepper to taste *1 Tablespoon Chili Powder more if needed * 1 Large Chopped Onion

 

Instructions In a large pot or skillet fry hamburger meat, (crumble as it cooks) Drain fat.

When browned add the onions. Sauté for 2 or 3 minutes then add rest of ingredients.

Simmer on low for 30 minutes. Now...very carefully add 1 Cup of Yellow Cornmeal into this mixture to thicken it. Do it by sprinkling it over the top and stirring quickly to prevent lumps.

Pour into a greased casserole. Dot the top with pitted ripe black olives. Bake at 350 degrees until hot and bubbly on top.

Usually about 1/2 hour to 45 minutes. drizzle bacon grease over the top before baking for an added flavor (this is not a must) only if diet will allow. This dish can be made the day before, then bake when ready. 

Ground Beef Recipe for Chalupas Ingredients for ground beef = Chalupas: *Corn tortillas, white, yellow, or red *Hot oil for frying (350°) *Refried Beans (Authentic or canned beans) *Mexican salsa (Authentic or canned salsa) *Ground Beef (Authentic and delicious with this ground beef recipe Guaranteed) *Sour cream (optional) *Guacamole (optional) *4 oz. grated cheese (Cheddar, Monterey jack, or mixed) *Iceberg lettuce, sliced thin *Ripe tomato's, diced

Directions for ground beef recipe: Fry the corn tortillas, one at a time, in hot oil (350°). Put the tortilla into the oil, let fry for about 20 seconds, then turn over with tongs. Let fry for about 2 minutes, then turn over again. The white or yellow corn tortilla should turn a golden brown, but not a dark brown. The red tortilla's will turn a darker shade of red and all will quit bubbling when they are completely fried throughout.

Remove when done and place on a paper towel to absorb the excess oil. Allow 1 chalupa per person if serving as an appetizer, two if for the entree.
