Back From Mexico
trip to copper Canyon was wonderful. Beautiful scenery and lots of great food. I am preparing peppers and onions in cheese sauce for lunch with baked chicken. We will have sliced tomatoes in addition to the peppers and onions. Dessert will be Enchiladas Frutas with ice cream. I got some new meal ideas in Mexico.
No, I am not in Texas for the whole summer. i was coming home on Sunday, but now, it looks like I will stay a little longer. My plans are up in the air at the moment. Dad is having problems with his knee and I have to take him to the doctor and then I have will know what else I have to do and when I will be home.
The lunch turned out to be really good. The enchiladas frutas were especially good. I made them from sugar free cherry pie filling, tortillas and Splenda brown sugar and Splenda Blend sugar in the topping. The peppers and onions in cheese sauce were also very good. I used a milder pepper than they used in Mexico, which if I were doing them for myself, I would not have used the milder one. However, Dad seemed to certainly enjoy those, too.
Karla, Great choice for dessert with the Enchiladas Frutas. I use either Apple or Strawberry filling. YUM YUM and no one can ever tell the difference in the artificial sweeteners...I love it! What part of Mexico was it again? My brother in law want me to go home with him in December to see the family but I havent made up my mind yet. I would stay about a week, I think then fly back home ALONE (that is the scary part). Glad you had a good time! Susan
