What are ya'll COOKIN' today?

I haven't been in much of a cooking mood lately.  It's just Kyle and me most of the time and he doesn't get in to eat till nearly 10 pm.   Today, I'm going to make chili dogs and have kraut, cheese, relish or whatever else Kyle and Jill may want to have on them.  I may bake some tater tots, or they can just have chips. I need some very simple, basic ideas for quick meals for 2-3.  Please feel free to share your ideas with me.  I don't want sandwiches all the time and neither does Kyle.

Hey! I wondered where you were this morning. Sounds like you had a great weekend. We had the kids and gkids over yesterday and it was fun, you know how babies always change every time you turn around. I am looking forward to the new gdaughter any day now, will be interesting to see how Addison reacts. I need some of those meal ideas for 2 as well, its a challenge to cook for 2 and not have a lot of left overs, which usually get throwed out, waste of time and money! We did get some Boars Head meat for sandwiches a couple weeks ago, big mistake, now the regualr turkey just does't taste as well. Have a great week.! Jan

I hope we get some good suggestions on here today.  I need 'em.  I've never tried any Boar's Head meat.  Do you get it at Publix?  I think I've seen it in their advertisements. I know what you mean about those grandbabies.  I KNOW you are excited about the new one on the way.  My, oh my....I love my grandson and I know just how you feel about LOVING yours.

Yes we got it at Publix, it is great. I tried it at my sons house and had to have some. I think the turkey is called black forest or something like that. They will let you sample it before you buy it, its pricey though. Christian is so cute. I saw the pics of him eating a egg roll, enjoy him, you'll blink and he'll be starting school! lol

We grilled for my Dad last night, so we'll have leftovers - cheese brats (maybe a hamburger patty), cheesy bacon mashed potatoes, salad...maybe some leftover banana pudding (SF of course).  No cooking for me tonite, but I have got to get back in the habit!  Since my hubbys WLS, I haven't cooked much...we've just eaten leftovers, lol.

Hi Elle.... It is just the 2 of us at home. Yesterday, I fixed homemade taco salad, with ground turkey. A lot of times I fix skillet grilled chicken and have a good mixed salad with it. IT just varies. A few nights ago, I got some wonderful chicken sausages at CostCo. I fixed those in a skillet, then cut them up and had catsup/curry powder on them, along with microwave "Fried" potatoes and crusty rolls for a German flair. Just remember...LESS will do now!! My DH gets home at 7 PM or later when he is working, and I hate to eat a huge meal that late in the day. BTW....my mother's maiden name is Hubbard!! Think we may be kin??? I'd like to know some family background from you...I have quite a bit of genealogy info on that side of the family.

Good morning Miss Elle.  I have cube steak out.  I am going to do crock pot cube steak.  I have to brown mine.  I have tried it both ways and it just seems like I have to have that brown crust.  I baked a ham Saturday.  Last night we had ham sandwiches.  Then this morning I made ham biscuits.  I think we are about pigged out.  It is time for some cow!!!

Morning Elle,

Just a suggestion, next time you go to Barnes and Nobles, check out their magazine section. I *think* Country Woman has put out a magazine specifically for cooking for two. I know I have bought one in the past, just cant remember if it is put out by Country Woman or not. I know in the Country Woman magazine I have read a page on recipes for just two. With my nest emptying, I am going to subscribe to the Cooking For Two magazine. I just love it!

Here is a EASY and quick casserole from one of Country Woman's older magazines. My Mother subscribed and saved them all. I am blessed to have them, and treasure them. I just love this magazine and it is reasonably priced for all the recipes you get from them.

Farmers casserole

3 cups frozen shredded hash browns

3/4 cup shredded montery Jack cheese ( I suppose you can use any flavor you would want of cheese)

1 cup diced fully cooked ham ( I buy the ham cubes in the lunch meat section, already cooked and cubed)

1/4 cup chopped green onions

4 eggs

1 can evaporated milk

1.4 teaspoon pepper

1/8 teaspoon salt

Place potatoes in a 8 inch square baking dish. Sprinkle with ham, cheese and onions. beat eggs ( you can also use the equivalent of egg beaters if you wanted too) milk, pepper, salt, pour over all. Cover and refridgerate overnight or several hours. Remove from fridge, 30 mins before baking. Bake uncovered at 350 for 55-60 mins, until a knife inserted in the center, comes out clean. Yeilds: 6 servings.

Its a often requested favorite here, along with a salad, or coleslaw and some of green veggie and rolls. Hope this helps.

I cooked a lot over the weekend, so not much cooking to be done this week.  Will cook pasta to go with chicken breasts cooked with fresh tomatoes, onions, bell peppers, and garlic.  We'll also have eggplant I cooked yesterday and some salad of home grown tomatoes and cucumbers.  I'll pass on the pasta and put grated Parmesan on my chicken.  I LOVE CHEESE!  There's always at least 6 different types of cheese in my refrigerator. Debbie PS - Christian is a cutie!  I'd love to kiss those cheeks!
