Mexican Fish Packets
- 1-1/2 lbs. red snapper fillets
- 1/4 cup sliced green olives
- 2 cups grape tomatoes
- 1 red onion, chopped
- 2 cloves garlic, minced
- 1 jalapeno pepper, minced, if desired
- 2 Tbsp. lime juice
- 1 Tbsp. olive oil
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 2 Tbsp. green salsa
- 1 tablespoon honey
Preparation:
Prepare grill and heat coals on grill. Cut fish into 6 serving pieces. Place fish on large (18"x12") rectangles of heavy duty foil. Mix olives, tomatoes, onions, garlic, and jalapenos in small bowl and arrange over fish.In another small combine, combine lime juice, oil, salt, pepper, green salsa, and honey and mix well; spoon over vegetables. (If making ahead, add this mixture just before grilling, otherwise fish will over-marinate and be mushy). Seal packets by folding foil over twice, then sealing ends.
Place packets on grill, cover and cook 6 inches from medium coals for about 15-20 minutes, or until fish is cooked through and flakes easily with fork, turning once and rearranging on the grill. Serves 6 My sister came down yesterday and Brought my nephew to stay a week with me. I fixed these for us for lunch and they were to die for. I served them with a salad. Just thought I'd share.
