Mexican Fish Packets

  • 1-1/2 lbs. red snapper fillets
  • 1/4 cup sliced green olives
  • 2 cups grape tomatoes
  • 1 red onion, chopped
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, minced, if desired
  • 2 Tbsp. lime juice
  • 1 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 2 Tbsp. green salsa
  • 1 tablespoon honey

Preparation:

Prepare grill and heat coals on grill. Cut fish into 6 serving pieces. Place fish on large (18"x12") rectangles of heavy duty foil. Mix olives, tomatoes, onions, garlic, and jalapenos in small bowl and arrange over fish.

In another small combine, combine lime juice, oil, salt, pepper, green salsa, and honey and mix well; spoon over vegetables. (If making ahead, add this mixture just before grilling, otherwise fish will over-marinate and be mushy). Seal packets by folding foil over twice, then sealing ends.

Place packets on grill, cover and cook 6 inches from medium coals for about 15-20 minutes, or until fish is cooked through and flakes easily with fork, turning once and rearranging on the grill. Serves 6 My sister came down yesterday and Brought my nephew to stay a week with me. I fixed these for us for lunch and they were to die for. I served them with a salad. Just thought I'd share.

Sounds really good. Can you sub another type fish? I have never eaten red snapper. Is it very fishy? I don't really care for strong tasting fish.

other than catfish , bass or croppy, thats all I had ate. But this was really good I think the onion draws out the fishy taste. When I cook catfish I always fry some onion in with them it takes the fishy taste out.
