Tomato Pie Recipe

I saw the earlier post about Tomato Pie. Here is a recipe that I have. Not sure if it is the same as the other posters but it is sure worth a try!!

INGREDIENTS

  • 1 (9 inch) deep dish pie crust
  • 4 large tomatoes, peeled and sliced
  • 1/2 cup chopped fresh basil
  • 3 green onions, thinly sliced
  • 1/2 pound bacon - cooked, drained, and chopped
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper
  • 2 cups shredded Cheddar cheese (May sub Mozz for the cheddarr)
  • 1/4 cup mayonnaise

DIRECTIONS

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In alternating layers, fill pastry shell with tomatoes, basil, scallions, bacon, garlic powder, oregano, and red pepper. In a small bowl, mix cheese with mayonnaise. Spread mixture over top of pie. Cover loosely with aluminum foil.
  3. Bake in preheated oven for 30 minutes. Remove foil from top of pie and bake an additional 30 minutes. Serve warm or cold

Thanks for sharing.  That sounds so yummy.  I will have to try this for sure as we have about 150 tomatoe plants planted this year and I am sure we will have to try to figure out different ways to use them. Any suggestions? Might you have a recipe for tomatoe gravy? ~Susan

Hi Susan.  I have not made the tomatoe pie but have tasted it.  I may have to make one this year.  I make tomatoe gravy  often.  I just brown flour like making brown gravy.  When the flour is browned I add the tomatoes.  Then I add water the consistency I want the gravy to be.  Make sure you add salt and pepper.  I just did this Wednesday night.  Jimmy wanted rice and tomatoe gravy.  I did bacon, eggs and biscuits.  Breakfast for supper. I will be looking to see the way other people make tomatoe gravy.

recipe for tomatoe gravy Take a couple heaping tablespoons flour and brown in bacon drippings or regular oil. Reduce heat and add water (usually a cup--more or less) gradually while quickly stirring the mixture until no lumps are found.  Gravy will thicken as you stir.  Add 1 can diced tomatoes or a large fresh tomato that has been diced. Salt and pepper to taste after adding tomatoes.  Stir until tomatoes are thoroughly heated.  More water may be added if gravy is to thick

Hi Phyllis.  I think I may have to try this.  I have tasted a tomatoe pie but never made one.  Have a good Friday and weekend.
