Whatcha "COOKIN'" today???

Me?  I'm not cooking a darned thing.  We have leftover spaghetti so we'll be having that and some salad.  It's fend for yourself day around here.  I haven't even had breakfast or lunch, just some cheese crackers. Is anyone cooking today?  If so, WHAT? I hope the board gets fixed soon.  It's been sad not being able to post and read and such today. Loretta

My daughter took me to lunch today and I have half of my food leftover so that's what I'll be having. Leo's mom cooked us a tomatoe pie yesterday and if I know him, he will fini**** up tonight. That thing was so doggone delicious!!!

We'll be on the road to S.C. tomorrow night and on the road all day Saturday so no cooking until Sunday. At that time I'll put a roast on and slow cook it all day.

The board seems to be a tad bit better.

Pardon my ignorance...but what is a Tomatoe Pie?  Never heard of it!  Sounds yummy....

I had never heard of them until about 2 years ago and at a party we were served these small round dishes of tomato pie. I didn't ask for the recipe and wish I had. Well, yesterday Leo's mom brings this regular pie tin and says its a tomatoe pie. I tore into that thing real fast. It consists of like stewed tomatoes, mozarello cheese, light mayo, peppers, bacon bits and I'm not sure what else. You mix the ingrediants, except the cheese, and pour it into a pie crust and top it with the cheese. I'm not sure how long it cooks but when its done you want to lick the pan and crumbs all up!!!!

I'll be getting the recipe this weekend and will post it next week. Leo's mom has to cook it with lowfat ingrediants because her husband is diabetic and has heart problems.

I can't wait for you to get that recipe and post it.  That tomato pie sounds YUMMY~  Please, don't forget to post it as soon as you can.  I LOVE TOMATOES!  Only thing...they're bad for my potassium.  :(

We're having chili for supper tonight! I put in the crockpot this morning and it should be ready to go when i get home!

I fixed stewed squash and onions. Red Beans and rice with polish sausage choped up with it. I also got fried okra. Then Shannon came and got me and took me out to eat so thats tomorrows lunch. Anytime he wants to spend time with his mama I'm more than willing.  I'm thinking about running away. If my supper stays with me a while(I say that because I ate something I haven't eaten in 2 years and it's sort of iffy right now) I may drive down to Snead and spend the night with my little sister.  Everybody be good and remember I love ya'll.
