Well, there are NO leftovers from yesterday.....so I'm making steak fajitas today.  I have some sirloin steaks I got at Sam's awhile back and they are kind tough when grilled, so I am going to slice them real thin and cook with some peppers and onions and have them on tortillas.  I've got lettuce, tomato and cheese and salsa to have with them.  I hope they turn out well, cause I've never made fajita's before.  Am I supposed to use some kind of seasoning?  Can anyone tell me?   I have plenty of time if I need to go and get something. Yes u do they have a fajtas pack like taso seasoning


Nothing tastes as good as being thinner feels.

I have to walk early in the morning, before my brain figures out what I'm doing.

Steak Fajitas Recipe

Ingredients

1 lb of flank steak or skirt steak 1 large yellow onion, peeled and sliced with the grain, not against the grain as one would normally slice an onion. Slice first in half, and then slice off sections a half inch wide at widest point. 2 large bell peppers, stemmed, seeded, de-ribbed, sliced lengthwise into half-inch wide strips

Marinade: Juice of 1 lime 2 Tablespoons of olive oil 2 cloves garlic, peeled, minced 1/2 teaspoon ground cumin 1/2 fresh Jalapeño pepper, seeded, ribs removed, finely chopped (be careful not to touch your eyes or anywhere near your eyes after handling a Jalapeño pepper!) 1/4 cup chopped fresh cilantro, including stems

Method

1 Mix all marinade ingredients. Set the steak in the marinade and let it sit at least an hour, the longer the better.

2 Heat to high heat a large cast iron pan or griddle. Add a teaspoon of olive oil to the pan. Add the steak, frying on each side for 3 minutes, or to desired doneness. 3 minutes per side will yield approximately medium rare doneness for an average cut of flank steak. If pan starts to smoke too much, reduce the heat to medium high. Remove from pan and let sit for 5 minutes.

3 Reduce the pan heat to medium high. Add a little more oil to the pan if necessary. Add the onions, bell peppers. Cook, stirring frequently, for 5 minutes, until the onions are slightly translucent.

4 Slice the meat against the grain into thin slices. If you slice the meat at a slanted angle, you will be able to get your slices pretty thin. Flank steak is flavorful but can be a little tough, so thin slices will really help make it easier to eat.

5 Serve immediately with shredded cheese,  shredded iceberg lettuce, salsa,sour cream,  and warm flour tortillas. (Hint for warming tortillas - put in microwave over a paper towel for 20 seconds on high heat.)

Can you believe that I am already up this morning? They joys of not working. Brandi and the boys should be on the road by now. I will be cooking what I was going to yesterday. Got to get dressed and get to the store and get some of those red tomatoes for that little fellows.I made some amish freindship bread Sunday, can only eat a very small piece tho. Very good. Have you or anyone else made it?

Elle, I see  others have already given you tips on the fajita technique.  Chicken or shrimp fajitas are also good.  Not cooking today 'cept for Mexican rice to go along with what I cooked over the weekend.  Tonight we're having fresh green beans cooked with some onion and garlic - no meat seasoning and Mexican chicken thighs.  I browned four big meaty chicken thighs then added celery, onion, garlic, a can of Rotel, a can of diced tomatoes, a pack of taco seasoning, extra cumin, chili powder, and several dashes of Louisiana hot sauce.  (This will last us at least two meals with leftovers for me unless one of our sons stops by.)  I'll make a salad of cucumber, lettuce, and tomato.  Pintos or black beans would go great with your dinner or mine!  Just a thought. Tonight we are having chicken stir fry and rice with homemade egg rolls.  It is our anniversary and that is one of my husbands favorite meals!!!!!
