Mexican Fish

Ingredients: 1/2 cup salsa 2 tablespoons mayo 2 tablespoons lime juice 1/ cup shredded monterrey pepper jack or mexi blend cheese 1 1/2 lbs halibut or other firm fish filets (we like talipia or cod) Preheat oven to 400 degrees.  Coat a baking dish and the fish with nonstick spray.  In a bowl, mix salsa, mayo, lime juice and cheese.  Season with salt & pepper.  Spread evenly over fish.  Bake for 10-12 min or until fish flakes easily with a fork. (It comes out so moist that I actually thought the fish wasn't cooked well enough!) Lisa
