Recipes with a French Flair
1 t. honey (remember you can buy the sugar-free kind if you cannot tolerate real honey)
Juice of 1/2 Lemon
1/2 t. butter ( You can use a substitute if you wish)
4 yellow peaches or nectarines, pitted and cut into slices (8 per peach)
Salt and freshley ground pepper
Heat barbeque or broiler.
Mix the honey 1/4 cup of water, and lemon juice over medium heat and stir until dissolved. Let cool for 5 minutes
Pour half of the honey mixture over the chicken breasts.
Melt the butter in a skillet over medium heat and add the peach slices. Pour the rest of the honey mixture over the peaches and cook for a few minutes until the peaches are tender, but not mushy.
Grill the chicken breasts. Let rest for a few minutes and slice on bias....an angle and then plate with the peaches.
Figs with Ricotta 4 T. honey (remember they make a sugar free one) 1 T. orange zest 4 strips of orange peel 8 fresh figs 1 c. ricotta cheese (some people prefer cottage cheese because of texture)
Mix 1/2 c. water, honey, zest, and orange strips in a large skillet over medium heat, stirring until the honey has dissolved....about 2 minutes. Bring to a boil and coo****il the syurp has reduced and thickened...about 5 minutes
Remove from hear . Add figsto the pan, and gently coat with the syurp.
Spoon 1.4 cup ricotta into each serving bowl, add two figs, and drizzle with syrup.
These are different from what I have seen other places and thought you might like to try these as the fresh fruit will soon be available.
