Menu Ideas/Country French for Summer

Breakfast

Blueberry smoothie

1 slice of multigrain toast

1 oz. slice of ham (Deli slices of about 1/8 inch thick are about 1 oz.)

Lunch

Potato soup (potatoes, onion, salt, pepper, boiled then add low fat or fat free milk and heat through)

1 hard boiled egg

1 thin slice of watermelon

Non alcoholic/non-carbonated drink.

Dinner

Grilled chicken with peaches

Green Salad

Brown Rice with almonds

I'm a huge fan of Brown rice with almonds.  Actually a huge fan of almonds!!!  Thanks for sharing these menus with us Karla!

Karla...I wonder if that potato soup would be good if a bit of chicken broth was in it.  Just an idea.  these menus are a great guideline.  I did the tuna yesterday.  I am trying to get on track and lose about 20 or 30 more pounds.  Thanks.

There are several ways to make potato soup.....and adding broth is certainly one way that people do it.  This is just my way of doing it, but you may have another favorite way to make yours.  It is a good gentle soup for the tummy and can be served cold....although I have never thought I would like cold potato soup.
