It actually depends on the type of WLS you have. For RNY the video is right. For VSG drinking is still problematic but for a totally different reason.

When a person has VSG and eats dense protein or fibrous food the pyloric valve closes, which means that if you add a drink on top of a full sleeve the drink has nowhere to go but up and out, which is very unpleasant.

Actually both are true for both RNY and VSG. The applesauce is a great demonstration of food flowing through too quickly with water which CAN and DOES happen with VSG. The other issue which can and does happen for both is as Kelly-Anne mentioned, the fluid having no place to go (although in my and many other VSG'ers experience the protein/fibre is irrelevant). And there is a great visual for this, but I know I don't need to post a video as everyone can readily picture this ....imagine a clogged toilet, and what happens when you flush and the clog doesn't budge. You now have an overflowing toilet, and a mess to clean up, just because you've added a little water.
Bottom line, don't drink with your meal, and follow your surgeons guidelines about the timelines. In the Edmonton Weight Wise clinic it is usually no fluids for 30 min prior to eating, during the meal, and 30 min afterwards. If you are pre-surg it's a great idea to start getting into this habit.
