hard boiled eggs

I thought i would make half a dozen to have in the fridge for a snack or something to eat before work... So i left the shells on because it cuts down the smell in the fridge. Well, i lose half of the egg everytime I try to peel one!

Is there a trick, or do they just have to peeled when they are still warm?

Yes, there are tricks. As soon as my eggs are cooked I dump the water out of the pot and stick the pot in the sink with the cold water running into it. While that's happening I shake the pot to get the shells well cracked so the water can get between the shell and the egg, which will shrink a wee bit as it cools. Once they're cold I peel them, then store them in either a sealed ziploc or airtight container in the fridge.

Of course, for the ultimate in lazy you can buy them already peeled from the Grocery People. About $1 extra per dozen, but incredibly convenient.

buy lots of extra eggs, they are only hard to peel when they are fresh

I find that if I boil the egg slightly longer than normal, they peel much easier.  I also douse the eggs in cold water for easier handling.

 I have my egg boiling down to a science!  I had to hard boil 200 dozen eggs for an Easter egg hunt.

So, start with eggs that are closer to their expiration date.
Put in lukewarm water over medium heat and bring to a rolling boil.
Continue to boil for 1 minute.
(I usually just start the timer when I realize they are boiling...I don'****ch too closely).

The trick is to put them in cold water THE SECOND you pour off the ho****er.  Keep running cold water in the pot to cool the eggs off.

This will stop the cooking process and not turn the yolk green and the eggs should peel pretty much perfectly!

We have a steamer and put our eggs in there for 15 minutes. Perfect hard boiled eggs every time.
