I am confused about something though. My menu says 2 tblsp. of foods and yet I can tolerate more. ex. 1 cup of tomato soup vs 2 tblsp. 1/2 cup cooked carrots vs 1/4 cup cooked carrots.
Am I doing something wrong by eating somewhat larger amounts of approved foods as long as I am not overfilling my pouch??

The best person to ask would be your doctor or nutrionist. My doctor told me that over the first year the pouch will eventually be able to handle 1 to 1 1/2 cups of food per meal. So.. not sure where that falls with your current status. It may also be that some things, like liquids, pretty much go right through the pouch so they would create less of a full feeling.

You should be eating the quantities that your doctor tells you to. I was told to expect to eat no more than 1/2 cup of food at any one time for 6 meals a day for the rest of my life. Today, I got my stage 2 (pureed foods) diet instructions. I was told to measure out the food in the little 1 oz cups and to have no more than 4 of them (1/2 cup total) for any one meal. Also the meal should take 30-45 minutes to consume.

Congratulations! You are doing great. I would check with your nutritionist or surgeon though.
As I read through here I see that there are so many variations. I am eating 3 meals of 3 oz a day with 60 grams of protein. I am sure I could eat more if I tried but I don't want to. So check and ask them why.
