Hello I am right there with you Dana, I am having rough time getting back in control now on top of things I am suffering with Plantar fasciitis in my foot very painfull,so can not go to gym, well I can but only upper body until it heals . I am depressed, need to lose last sixy pounds but can not get things together so that makes me hide from here, so down about my progress. Most people on here are at goal weight. I have been praying for my goal weight and yet I realize it is all my fault which does nothing for me but feel bad. Anyway not a whiner so I will not continue to moan. I just need to find a way to get back into this and lose just not sure how because I always have such great ambition in my head but never seem to act on it. I WILL GET IT TOGETHER. Just wanted Dana to know I am on her same page, Maybe we can support each other somehow, take care Kelly

Cheater's Chile Verde (can make in crock pot or on the stove).. for us gringas!

1 pork picnic or pork butt (I usually make a huge batch, cause you can freeze it too), so about 2lbs of pork
4-6 jalapenos (I add a habanero or two, cause, well, I like fire coming out of my ears) -- I puree them in the food processor
Garlic powder (1 to 2 Tbls.. depends on how much garlic you like)
1 small yellow onion (finely chopped)
1 Tbls ground pepper
1 Tbls salt (I put in a little to start, can always add more at the end, if you need to for seasoning)
1 can cream of mushroom

In large pot, full half full with water, add pork, garlic powder, onion, jalapenos, ground pepper and salt, boil until pork is tender and separates easily, and there is only about 1 cup of water left.  Take and add can of cream of mushroom.  Simmer, while making your pot of rice.

I serve to Ray and brothers over rice, with shredded cheese, and sour cream, rolled into burritos.  For myself, I put a little over rice, with my cheese and sour cream.

If you do the crock pot, just add 2 cups water, set on high, and turn the pork half way through the 4 to 6 hour cooking process.  Fork pork apart, and drain off any excess liquid, until you're down to a cup, then add cream of mushroom soup.

My best friend's mom has made this for us for years.

Glad to hear that the Korean Fire Oil is a mouth heat, which I like... released endorphins... ahh!

Those brats!  Kick them for me!  Teasing you...     men   & they think that you'll let them eat the foodies... No Soup for You, Guys!!!

Right now, I'm big in to my Chicken Salad.  I like it kind of sweet, so I found a way to achieve that.  And it's great on wheat crackers.

1 large can of canned Chicken Breast
1/4 c of dried cranberries or crancherries
2 stalks of celery (finely diced)
1 half small red onion (finely diced)
2 hard boiled eggs (chopped well)
Mayo of choice (I still can't handle light or diet, so I used very small amounts, and add salad dressing for moisture)
Raspberry Hazelnut Vinegrette salad dressing

Open canned chicken breast, strain and break up.  Place in sealable bowl with rest of ingredients, adding mayo and Raspberry dressing to taste, mix and chill.

Serve over what crackers, or add lettuce leaves and make into wraps.

Calorie count is going to vary depending on what type of mayo you use.

Anyone tried the new mayo made with olive oil yet?

Also,

Lazy Lady's Chicken Quesadillas

1 Carb Control tortilla (I use the 6 or 8 inch.. depends on what I find at the store I'm at)
1/4 c low fat cheddar cheese (your choice of mild, medium, sharp)
1 small can of Chicken breast (like making chicken salad type)
Ground pepper
Adobo seasoning

Spray skillet or grill (I use my Foreman's grill for most everything).. heat up to medium heat.
While skillet/grill is heating put tortilla in, add cheese on one 1/2 of the tortilla, open canned chicken and strain), break up over cheese amount desired (store rest for later, use over salad with cranberries.. hmmm.. I'll give you that recipe too), sprinkle with adobo and ground pepper, and fold over tortilla.

Lightly brown both sides, remove from heat, cool, cut, garnish with FF sour cream, guacamole, etc.  Enjoy.

Takes about 5 minutes to make.  If I won't eat anything else, I'll normally settle for that.

Yes, braces are off, in my retainers now.  Getting tired of hubby and brothers mocking my speech impediment!  But at least if they make me mad enough I can yank out the hardware to tell them off.

The fire oil, at least to me, is more spicyhot in the mouth, not so much on the tummy.  Hubby suffers heartburn and he still wolfs it down without any issue.  But no one here has an ulcer.

I doctor the whole batch (have some going now for next week), and then if I want it hotter, I put in a dash for my individual bowl.

Making chile verde in the crock pot, since it's soo dang hot, for burritos for the hubby, and over a little rice for myself.

Sounds like they miss you too... Hint, Hint... So you'll have to fit EVERYONE into your day!    On second thought that won't work either!  We'll just have to love you whenever you get "near"... So do that often!!!  

The profile problem seems over, but I never know if it's too personal.  Go Figure! I do feel better about being more open and letting my Dec gang "see" me... Thanks for the compliments...
