Hi Elaine,
Hope you don't have to wait in line too long.  Good for you getting out there to vote!  The last few years all my voting has been done by mail-in ballot so I already voted.  Not that it matters much, the voters here in Eastern Washington always vote differently than those in King County (Seattle area) and we are waaaay outnumbered so nobody and nothing we ever vote for passes or gets elected.  But still, it is my civic duty and I do it thankfully.

Your day's menu sounds good!  I wish my family ate meatloaf.  Maybe I should make some to freezer for myself.

Here's my plan:
coffee, coffee, coffee and lots of herbal tea
--nf, sf latte
B- 1/2 cup egg beaters, salsa
S- latte
L- 2 slices turkey lunchmeat, 1 frigo lite mozz stick
S- all-veggie soup
D- slow-cooker salsa chicken, broccoli
S-mini bag of sf kettle corn

wish me luck sticking to plan!

Molly

No one in my house eats meatloaf either...my little old-lady neighbor made some and sent half her loaf over to me...so I have to freeze it too.   I do that with a lot of things anyway, like my chili, cause it doesn't get eaten fast enough in my house and I hate to waste.

Good luck!

MMM meatloaf.  I have tired using fiberone cereal in placed of bread crumbs or crushed up black beans.  That was good, then used taco seasoning to make it a mexican loaf. lol

My neighbor uses farina or ground rolled oats.  I have just ground up the rolled oats in the blender or food processer and used that instead of bread crumbs.

OMG it is so simple...I can't believe I did not discover it sooner (only started using it in the last month).

1 cup rolled oats
1 cup chocolate protein powder
1 cup peanut butter
7 or 8 packets of splenda (some people use less, it is really a try it and see if you want less or more)

Melt the PB in the microwave for 45 seconds

Add powder and oatmeal and splenda, mix well...sometimes I have to just dig in with my hands because it will be thick.  Then roll into little balls (I make 30 to 40 balls depending on the size of them) put in refrigerator to set/cool.  I store mine in a gallon ziploc.

Love 'em!
