Guacamole and Salsa Recipe

I am posting these and they both were so DARN good and I just have to share GUACAMOLE RECIPE 2 avocados 1 tsp. salt 1 large. tomato, diced 1 onion, diced 2 jalapeno peppers, chopped 1/2 tablespoon chopped fresh cilantro 2 tablespoons fresh lime juice. Directions: In a medium bowl, mash the avocados and stir in salt. Mix in the the tomato, onion, jalapeno, cilantro and lime juice. Cover and chill in refridge at least 30 minutes before serving. Enjoy it's very tasty! ~~~~~~~~~~~~~~~~~~~~~~~~ CORN AND BLACK BEAN SALSA 1 (15ounce) can yellow corn, drained 1 (15 ounce) can white corn, drained 1 (15 ounce) cans of black beans, drained 2 cups chopped tomatoes 1 bunch finely chopped cilantro 5 green onions, finely sliced 1 small red onion, finely chopped 1 red bell pepper, seeded and chopped 1 TBSP minced garlic 1 jalapeno pepper, finely chopped 1/4 cup fresh squeezed lime juice 1 avocado - peeled, pitted and diced 2 TBSP olive oil, or to taste 1 tsp. cumin 1 tsp kosher salt Stir all ingredients except lime juice, avocado and olive oil in a large bowl. Gently stir in avocado and lime juice then drizzle with olive oil to serve.

I had the Baked Tortilla Scoops chips and the Simply Naked Pita Chips. Both were GREAT with it. Both were really good..I actually got both recipes from a couple blogs I read. They had pictures posted and I ask for the recipes..I LOVED both of them. D

Good Picks on the chips! I buy Southwestern Salsa, but it doesn't have any fresh ingredients. The corn & black bean salsa that you posted will be an easy fit around here. I've made guacamole a few times... and it always goes fast. The store bought just doesn't cut it at all. Thanks so much! Ro

Thank you for the recipes, Diana! I have been looking for a good guac. recipe for a long time and this one sounds like the best and with a nice balance of flavours. The salsa will be fun to make for dh's family...they are crazy for Tex-Mex and that must make a huge amount. And I will look for those good chips, too...glad Ro asked about that. It would be such a waste to make great dips and have 'just-adequate' chips. Thank you! Molly
