What's for Supper?
How is your August weather this week? Our week started out nice and mild but has finished out blisteringly hot. Ok, I AM glad to be warm again after being cold all winter but near 100 is just too hot.
So...I am NOT cooking tonight! On the menu is a recipe from the Hungry Girl cookbook...gonna make "Crazy Good Cold Sesame Noodles". Wish me luck. Actually, it is shirataki noodles and if you haven't tried them yet you should. They have wonderful numbers and about zero guilt. Woohoo! They sorta blow up in the pouch similar to pasta so you don't want to eat too much but at least they are wheat free too and PROTEIN! I'm gonna sub the PB2 that Melissa sent me so it will be even less fat. (yippee and thank you!) Can't find a link for the recipe so I'll post it here if you want to try it.
Crazy-Good Cold Sesame Noodles (pg. 264) (Lisa Lillien)
1 pkg. House Foods Tofu Shirataki, Spaghetti Shape
1 tab. plus 1 tsp. reduced-fat peanut butter, at room temp
1 oz. light soymilk
2 tab. chopped scallions
1/2 tab light or low-sodium soy sauce
1/2 tsp. sesame seeds
1/8 tsp. minced garlic
1 no-calorie sweetener packet
optional: salt
directions: Rinse and drain noodles well. Pat dry. Place noodles in a microwave-safe bowl and microwave for 1 minute.
Drain excess liquid from noodles and pat them until thoroughly dry. Cut noodles into spaghetti-length pieces. Set aside.
In a small dish, combine peanut butter, soymilk, soy sauce, sesame seeds, garlic, and sweetener. Mix well. Feel free to season this sauce, to taste, with salt.
Pour sauce over noodles. Mix thoroughly. Top with chopped scallions and mix again.
Allow to chill in the fridge.
Makes 1 serving

100 degrees! We've had a mix of sunny 80s and rain... the next town over had hail! I am enjoying this summer so much more... without the sweating and near heat stroke, as in the old days.
Dinner sounds good and filling...1 Serving!!! Can I add toasted sesame seed oil or do you think that it would change the taste too much? I eat tofu (Hot & Sour soup from our local take-out... ) & added into mock egg-drop soup made with Lipton Secrets chicken noodle w/ chicken + a beaten egg ....So Thanks for the recipe!
Just plain lazy here... We ate leftovers! Barilla Pasta Plus with jazzed-up Ragu that made a basic Putanesca sauce with chicken added for more protein.
Sauce had Ragu Traditional, 1 can of tomatoes w/ mild chilis, 1 jar Kalamata olives (w/ pits, but this was way too many...and I ended-up eating most of them... 1/2 jar would be enough), about 1 T of capers, 2 garlic cloves, dehydrated onions (lazy...), (left-over) chicken, and a splash of EVOO. It's better the next day!

Mmmm...your jazzed up Putanesca sauce sounds yummy! I could put that on some Shirataki noodles. I think the sesame oil would be ok in the recipe just not too much, it'd be too strong. Personally, I thought it needed more garlic and less green onions but I'm not much of a fan of green onions.
Yup. 100 today and 101 tomorrow. Ick! We have to go to the in-laws for dinner tomorrow and if I know them it will be out on their rooftop deck. H O T ! After the last meal there I am going to bring my own food this time. It was waaay too many carbs last time and I left there with my belly actually aching from being so hungry. When I got home I ate too much so I will have to pre-plan to avoid that.
My plan is to switch to a really big purse and put in a small lunchbag-type cooler with my own stuff. If the meal provided isn't 'safe' I'll sneak mine out with some kind of good story. heehee

Thanks for the sesame oil reminder... too much... I've been there before with it. Uck!
I'm much more into garlic than green onions also. Tofu really picks up the flavor of whatever it's in... the texture is fine to me too.
Pack your own emergency food. I've gotten stuck that way, when we went out. Now I bring a snack at the very least. Good luck at the In-Laws with the Heat! Pack a spray water bottle and a mini fan!

Here is a link for the noodles: http://www.house-foods.com/tofushirataki_faq.html I get mine in the coolercase section of the grocery store where the tofu is but not all grocery stores carry it. The local health-foods-type store here, Huckelberries, has it in spaghetti shape and egg noodle shape. It is a bit rubbery and is made in really long strands so you have to cut it before you eat it or you'd be slurpring forever. The rubberyness doesn't put me off at all...I always cook our pasta really al dente anyway. To my tastebuds it has no taste at all after you rinse it well and only takes on the taste of whatever you put on it.

The PB2 is powdered peanut butter that has 75% less fat and calories than regular peanut butter. People on the WA state mb love it so much that they go in together and buy a case of it at a time to save money.
