I have some new ones, that I got today at work, and of course.. forgot them at work. Will bring home to post tomorrow. They are from Diabetic Living, and sound GREAT!

Hope you will get a chance to post them, Heather. I love your recipes! In fact, I made your oatmeal cookies over the weekend with the addition of 1/2 cup cocoa and 1 cup choc. chips. (Hey, hormones made me do it!) Made them a bit drier but if I ever do it again I'll either lessen the flour or maybe add some applesauce to counteract it. Wonderful taste, tho! Found them! I brought them home Friday of last week, and then lost them in my "cleaning" I'm doing of the house. Zucchini Pancakes 1lb zucchini, shredded (food processor) 1/4 tsp salt 1/2 cup finely chopped red onion 1/2 cup finely shredded Parmesan cheese 1/2 c whole wheat flour 1/2 cup refrigerated or frozen egg substitute, thawed 1 tbs extra virgin olive oil 1/4 tsp garlic powder & ground black pepper For the skillet: 1 tsp extra virgin olive oil Nonstick cooking spray (I like the butter flavor) Topping: 1/4 c light or non-fat sour cream 1. Combine the zucchini and salt in a large bowl. Let stand for 30 minutes. Place zucchini in strainer and press with hand or spatula to force out any moisture the salt sweated out of the zucchini. 2. Combine zucchini with rest of ingredients. If batter is not thick enough to hold together, add a little more flour, 1 tsp at a time. 3. Lightly coat large skillet with cooking spray, and 1tsp olive oil. Use 3/4 c of zucchini mixture, dropped in skillet with about 2-3 inches between mounds. Flatten to about 1/2 inch thickness, and cook. Takes about 4 minutes, flipping half way through cook time. Can keep warm in 300 degree oven while cooking rest of pancakes. Top with sour cream and sprinkling of parmesan cheese. Serving info: 69cal, 3 g fat (1g sat. fat), 3 mg chol, 154 mg sodium, 7 g carb, 1 g fiber, 4 g protein.

Mmm....can't wait for my zucchini patch to start producing. It has been a miserable gardening summer here in Spokane but now that it is hot maybe things will get going. Usually by now we have zuke's coming out our ears. Thank you for the recipe!

Pearl's so mad he doesn't come home on a regular basis. Fat sucker is off sucking up to some other family to be fed, I know it. When he does come home, he just hisses and complains about the babies. Then the babies gave me a heart attack this morning. They went over the fence! But we caught our neighbor's right as they let their boxers out, and we rounded up our miscreants. They've had their outside priveleges revoked until I'm over the coronary.

  Is this Pearl's basic emoticon... without ears and fur???  Sounds like you might have to reel the boy back into your life with some extra nuzzles.   Evil cat feeding neighbors!  Just make sure that they don't fall in love and decide to "keep" him... thinking that he's a lost soul!  Mercy!!!!
