Eats and Moves Post--Wednesday
Hi! How was your Wednesday? It was rainy off and on here which put me perfectly in the mood to catch up on my baking. My freezer supply of "Molly Treats" was almost depleted which always spells trouble. If there aren't safe goodies I venture into unsafe ones. Today I made: tofu cupcakes (for strawberry shortcakes), healthy chocolate muffins, bran/apricot muffins, Heather's Oatmeal cookies and chocolate pumpkin protein pies. Sad to admit that I feel panicky when I don't have my own safe treats but if they keep me eating better then so be it.
The only bad thing was that I sampled each recipe so it ruined my plan to eat healthier today. I wasn't hungry for more good proteins and had too many carbs...sort of an 'oh well' for me.
Moves were five hours at work today with a LOT of stairs and speed walking. Legs are hurting less today. LOL Drank double my usual amount of water and I think it helped. Here's the eats:
--nf, sf soy latte
1) homemade tvp protein bar
3) chai pumpkin protein muffins
baking grazing: 2 oatmeal cookies (small!)
1 tofu cupcake
1 chocolate muffin
1 bran muffin
2 sf fudgesicles
4) double serving of all-veggie soup, 1/4 cup almonds, 1 lf mozz stick

Ro...thank you for your continuing encouragement! HUGS!!! I will try to remember that I do actually need those carbs and to keep them in line but not feel guilty about it.
Melissa...it looks like I finally hit on a good batch of chocolate pumpkin protein muffins! My sister was visiting today while I was baking and she had one which I took a bite of and it tasted much better than the last time I tried it. Recipe changes include switching chocolate for vanilla protein powder, adding 1/2 cup cocoa powder, 1 tablespoon organic chocolate extract, 3/4 cup Starbucks mocha syrup and 3/4 cup light soymilk instead of the canned milk and 1/2 cup Splenda brown sugar blend. Omitted the spices altogether. Nice chocolatey aroma, good depth of colour and a good flavour balance. Give it a try! I *almost* added some mini chocolate chips but that would have put the calories too high.

Hi, Molly! I go into a frenzy when I "smell" foods so I'd have a really hard time with baking. It is the weirdest thing that I am more attracted to the smells than the food. If there is little or no aroma, I can just see the food and not get any strong urges. On the Grad MB, someone said that they did not have hunger until they added sugar and less healthy carbs into their diet. I believe that this is a really good point. Seems like a lot of people struggle will non-complex carbs, but are fine with complex ones.

I ended up making these today.. wow so good! I even made a decaff mocha espresso frosting to go on top..yumo. I like that it made 21 muffins for me.. carbs are nice.. protein nicer (used higher protein powder - my choc has 27 grams a scoop!) and then the fiber gets upped from all the cocoa powder.. delsih!

Sounds yummy! I have to make that frosting....wow what a good combo. And what type protein powder are you using? I am very much interested in upping the protein of these little babies without altering the texture.
Oh...for the chai version just buy the McCormack chai spice blend (I've seen it at WalMart) and substitute an equal amount of it for the usual seasonings in the regular pumpkin version. It is a really nice, subtle change.
Question...have you ever felt like you are coming down with the flu during a low blood sugar episode? I've felt really bad tonight and knew I needed to eat, didn't want to eat, wasn't hungry and didn't want to take my reading. Felt generally cr*ppy, achy, headachy, hot, shakey but now that I've forced myself to eat I am starting to slowly feel better. This is weird. I think I'll just go to bed.

ps...I haven't forgotten about your syrups, just haven't had time to get a box put together!
Ah yes you told me this before and I could not locate this spice at my walmart, I will have to check other grocers.. sounds lovely.
As for the protein powder, I use one I purchased at costco.. its a chocolate one that comes in a bulk bag.. I think they only carry EAS brand now which has similar stats if I am not mistaken. Might check out sams club too!
As for the "flu" question. When my blood sugar goes down I get a warm sensation over me and if I am standing my knees get weak and I feel like I just need to go lie down. So I guess you could say that. If I don't treat it at that point, the sweats come, light headed ness and then racing heart... I have never let it get further than that b/c obviously I need to eat something. Once I eat.. usually do a protein bar (works the best to prevent subsequent episodes.. atkins for some reason is my saving grace) then within 5 mins I am better..
No worry on the syrups. I bought a basket for my counter and finally have them all bundled up. OH I did buy regular cinnamon, almond roca (LOVE THAT!), more french vanilla (LOVE THAT ONE TOO!) and so my basket is looking rather full! Now I need more snow cone syrups. Lol.. I like the actual syrups over the davinci/torani ones on the snow cones for some reason. The raspberry is *OK* on it..
Tell me what your needs/wants/desires are and I can do another exchange. Do you need more PB2?
