SF chessecake????????????

I think I saw the recipe on the Dec board but not sure. It was making a baked cheesecake but with sf cookies as the crust and put into muffin cups. If anyone has it can you please PM me or post it. Thanx Corinn

Corinn...love the new avatar you tiny little thing! When I make sf cheesecake I always use a big springform pan so it wasn't from me but I don't see why you couldn't make the recipe from the Philly package that uses nilla wafers and just sub out sf products. You can get sf vanilla wafers if you want, also sub splenda, ff half and half and even sub egg beaters for the eggs. Don't go totally fat free on the cream cheese, that won't work. But you can do half ff and half low fat cream cheese. It will work just fine. With the egg beaters instead of eggs you don't get as rich a mouth-feel but they still set up properly. Good grief...here it is a week away from Easter and I haven't given a single thought to the family dinner or foods. Yikes!!! Thinking about cheesecake made me remember that, it's a good thing your post jogged my memory or I'd be in trouble next weekend. LOL

Thanx Molly. I know I am trying to find this recipe before Easter. A friend wanted cheesecake and I said that I'd make one but it would be SF and he said that's great. I did find it. A friend of mine on the VA board had it. Can you believe we are 15 months out??????? Amazing. Have a great Easter.
