Ooh, I just saw this in the listing of new recipes on Sparkrecipes.com and thought of the many of us here who love Fiber One cereal (and pumpkin and cc pancakes!). Pumpkin Waffles! I for one am going to try this recipe next weekend! Sounds like it will be very good and being a waffle, it should freeze well too so I can have one during the week for a special treat. I'd like to try a recalculation on the nutritional stats, they don't seem right to me but even if they are it still seems pretty doable. Got one! 10 bucks at walmart.. hope it works! Cheaper than I expected! Ok so for the regular cottage cheese pancakes you don't do anything different when u make those? How many waffles does it make, just one large belgiun one? MMMM mmmm I can't wait to try these.. might need to wait until thursday, I start the new job at the floral shop tomorrow.. eeek, tell me why I am nervous? Haha..

I can't wait to try it.. hmm will it be pumpkin or regular tomorrow.. found some fresh blueberries today at the local grocery.. grabbed those up so fast. been so hard to find here lately. Frozen isn't the same

These were very good. I made a half batch.. which would be the 277 cals it calls for. Mine figured to be 275 cals with syrup but I used the "egg beaters with "some yolk" for 40 cals per serving. It made two waffles.. and honestly the mix was a little "long". I would use 1/4 cup of the egg beaters next time. It was tasty! I ate two of them though (gosh im a hog) and it was filling but if you paired one with soy sausage or some sort of meat it would be just as filling. thanks for sharing.. I love my waffle iron!

So if I make the whole batch it will make four waffles? If that's right...totally cool, I will freeze the rest and do as you suggest--have some sausage (prob. turkey for me) and maybe a scrambled egg beater. Sounds like a delicious weekend breakfast. Woohoo!

Yes and might be able to squeeze 5 or 6 out of the recipe if you keep it as is. Notice the sparkpeople.. it says 2 servings.. each serving has 277 calories.. so that would be for two waffles. I did the math on my own and came up with a lower carb count even with my SF syrup.. but its close. Hugs! its yum! I have been full all day from them. I ate them at noon, its 5:30 here now.

OH MY GOSH....lower calories AND full all day??? Shoot, with that we could afford to add some flax seed or maybe just some clear powdered fiber stuff to bump up those numbers too. Oh, come to mama, you waffles!
