Poop Cookies?
This recipe has been going around the RNY board. I have not tried them as I am obviously doing the 5DPT and decarbing/detoxing but they sound great and have gotten good reviews.
Ingredients
1 can drained/ rinsed great northern beans
1 large egg
1 tsp baking powder
1/3 c. splenda
1 tsp vanilla extract
2 tblsp extra virgin olive oil
1 tsp nutmeg
1 tsp cinnamon
Blend slowly ingredients (try to keep it thick) in a blender and place in a plastic mixing bowl. Spoon on a cookie sheet sprayed with FF cooking spray. Preheat oven to 400 degrees and bake for 15-20 minutes. Let cookies cool and spray with a light butter spray and DUST with splenda. Enjoy!
Jennifer R revised it saying that this recipe is way too wet. She used canelli beans (spelling) in place of northern and then added one can of garbanzo beans to thicken it up. She said ti still needs something to "stiffen" up the batter just a bit more but to be aware that they do make more of a "cake like cookie". She said she would try adding flaxmeal to the mixture and to be sure and rinse all beans really well before adding them. She also said if u don't have flaxmeal to try some flour, couple tablespoons of WW perhaps. She used almond extract in place of vanilla also. Could make many different variations. Sorry I do not have the stats on these.

I've run across baking recipes like this many times before but never read many replies about how they taste. So the RNY folks are buzzing about them? Must be pretty good! Can't wait till next week to give it a try. Not in any hurry to be bringing back even substitute cookies into my diet. Actually, when I DO make cookies the first batch I make will be Heather's whole wheat chocolate chips. hahaha
Brr...I am so cold from stopping at the grocery store after the meeting tonight. Can you believe they didn't have any turkey sausage??? They did have ground turkey tho and they also had some interesting looking beef breakfast sausage so I got both. Then on the way home I remembered I have some turkey meatballs too that should fit into the plan so they are in the oven baking now while I catch up with you and get ready for bed.

Too bad no turkey sausage.. whats up with that? did you check the fresh section? that is where i got mine instead of frozen. Glad you found some other alternatives. I had my egg beaters and cheese with turkey sausage. I did cave and had a protein bar last night (sigh) whats wrong with me? Oh well back on today.. i need to be good! As for your bocca burgers.. i think those would be just fine, sorry I am just now getting back to you.. i think for day 4 they would be perfect.
Yeah, what IS up with that???? This particular little store isn't in the best neighbourhood but they do occasionally have some neat products so I thought it'd be a safe bet stopping there. (The guy in line in front of me smelled like a cat box, I swear...whoa, those clerks have SOME job!) When I got home I cooked up the ground turkey and also that beef breakfast sausage as well as my turkey meatballs from the freezer.
For today's results I made a separate post.
BTW...have I mentioned lately how much I truly value you???? You are so kind, giving, loving and sweet...we are ALL so blessed to have you here in our little December family.
Here's another Bean recipe for you! (the reviews were very good on this but a few people said it needed more chocolate)
Black Bean Brownies
Guiltless high-fiber, high-protein brownies.

Ingredients
15oz can black beans (drained & rinsed well)
4 large eggs
1/2 cup granulated Splenda
3 tbsp cocoa powder
2 tbsp strong coffee (or 1 tbsp instant coffee dissolved in 1 tbsp ho****er)
1 tsp baking powder
2 tbsp canola or olive oil
1 tsp vanilla
Directions
Preheat oven to 350*F.
Prepare an 8x8 baking pan by spraying it with cooking spray.
Mix all ingredients in a food processor or blender.
Add the beans last and make sure you blend VERY well.
Bake for 30 minutes, or until toothpick comes out clean. Allow to cool before slicing.
Brownies are approx. 2"x2" in size.
