Hey, December family...did you have a good weekend and did everybody survive the various Superbowl Parties without totally blowing the food plan? I didn't go to one so it was a non-issue for me. Still, not posting daily eats last week was a disaster for my overall eating. I still food journalled but just ate too much anyway! Woke up today with a 5# gain (please, let it be partially water!) so it is time to crack the whip on myself and get back into the right routine. Inventory is over and our VIP rescheduled the store visit so things will be better at work and I am so looking forward to less stress there. Whew! Today's moves were 8 hours running around, lifting and all the etc. for my job. I'm beat and glad that it was a busy day. Here's the food so far: --sf, nf soy latte 1) low fat dark chocolate muffin (a sparkpeople recipe) 2) 1/2 cup spinach 'lasagne' (no noodles), 1 hunts sf snack pack pudding 3) another muffin 4) 1 turkey/cheese rollup, 1/2 cup kashi go lean cereal, 1 sf fudgesicle 5) projected dinner: all-veggie soup...big mug 6) projected snack: 2 turkey/cheese rollups calories: 1029 carbs: 139 fats: 24 protein: 79 Carbs freakishly high again but that is the last of the muffins and obviously with the chocolate trend for the overall day I'd say it's a good bet I'm pms'ing already. Time to lock it up I think. haha How did you do today? Please let there be some of you out there willing to log your days eats and show me how it SHOULD be done. Molly

What is the recipe for the muffins? There are days I would LOVE to have a muffin. I just ordered the low carb muffin bagel things from Samsclub.com They have 10 grams of protein and are low fat and carb. I have not had them in a long time (years) as I use to get them when I did WW (2pts each) so I thought I would give them another try. Bad thing is I had to buy a case..72 of them. I figure I will FREEZE them. Diana

Here's both a link to the page and the nut. info as well as just the basic recipe. Mine come out slightly less carbs since I eliminated the Splenda brown sugar. My comments are in the ratings under Geminidream. http://recipes.sparkpeople.com/recipe-detail.asp?recipe=216325 Low Fat Dark Chocolate Muffins Snacks Brunch Other Breakfast Submitted by SBMMYERS These muffins are sweet and chocolatey; you'd never guess they're low fat 100 Minutes to Prepare and Cook Ingredients 1 c. old fashioned rolled oats (not instant) 1 c. non-fat milk 1 c. whole wheat flour 2/3 c. Splenda brown sugar 2/3 c. unsweetened applesauce 2 egg whites 1 tsp. baking powder 1/2 tsp. baking soda 4-6 tbsp. unsweetened cocoa powder 1/2 tsp. salt 1 c. dark chocolate chips (I like Ghirardelli) Directions Soak the oats in milk for about one hour. Preheat the oven to 400 degrees and then spray the muffin pan with cooking spray. Combine the oat mixture with the applesauce and egg whites, and mix until combined. In a separate bowl, whisk the dry ingredients together. Add the wet ingredients to the dry mix until just combined. Add the chocolate chips. Do not over-mix of the muffins will be tough. Spoon the mixture into the muffin pan, forming a total of 12 muffins. Bake for 20-25 minutes, or until done. Remove from pan and enjoy. * Note: this recipe is an adaptation of another delicious muffin recipe posted by SparkPeople member Misspenn, called "Low-Fat Oatmeal Muffins" Number of Servings: 12 Recipe submitted by SparkPeople user SBMMYERS. Hey Molly...I'm afraid I'd be no good for your "how it SHOULD be done" example, but I suppose I *could* post my eats and that would make you feel better...LOL! I promised Ro that I'd update everyone on how I'm doing, but quite frankly, I'm just too tired tonight. Anyway, my eats are this for the day without numbers attached because I'm tired and lazy. 1) 1/2 cup Ginger Garlic shrimp from local chinese restaurant chinese tea fortune cookie 1/2 egg roll 2) 8 spiced gum drops 3) 1/2 cup Ginger Garlic shrimp leftover 4) 1/2 banana w/1 tbsp reduced fat peanut butter 8 oz. skim milk 5) 1.5 oz beef jerky 6) 10 0z. skim milk

Aw, you need a hug and someone to tuck you into bed with a hot cup of tea and a new magazine for some rest. Being a mommy, I know that won't happen for you tho. Your eats don't look bad except for the gum drops but come on, it was only EIGHT. Are you sure you are getting enough calories? It doesn't look like very much. But you do have all the major food groups covered and it looks like lots of protein. When do we get a new belly picture? Molly...who should be in bed snoring right now waaaa

I should be in bed too, yet here I sit. To be honest, I'm a bit concerned about my calories lately. I just can't seem to eat enough, nor do I even feel like it. I've been throwing in some bad stuff that's takes up very little room just so I can boost the calorie count. Honestly, if I could get away with it, I probably wouldn't eat ANYTHING right now. Belly is huge, but I'll see if I can't get a photo in tomorrow, or sometime this week. I'd do it tonight, but my youngest gave me a "makeover" tonight and I've yet to wa**** off. While he made me feel beautiful, not everyone can appreciate it the way I do. Hope you get some good rest tonight.

Still recovering from being sick, and actually feeling like eating again. So, I'm not a good example today of what to eat. Way too high on the carbs, but I've been dropping weight since I got sick, and just trying to get it to STOP or slow down again! I'm only 5lbs from surgeon's goal, and still trying to adjust to no fat on my face. Don't want to look sickly, you know. B: 1/2 mini wheat bagel w/ light cream cheese, 1 slice tomato and 2 slices turkey breast S: Bag of peanut M&Ms (been craving chocolate .. stupid week before period!) L: Small slice of meat pizza (not PKs meat pizza though) S: 1 FF raspberry yogurt and other half of the mini bagel with same fixings as above D: Lemon chicken stir fry w/ about 1/3c white rice (couldn't find my dang box of brown rice!) Think this is the most I've eaten in almost 9 days! Water: 66 oz.

Glad to hear you are feeling better and able to eat more now. Your day sounds like it was yummy and satisfying. I'm impressed you can eat rice of any color...it hurts my pouch like crazy unless it is the puffed variety or pounded into flour and used in recipes. Are the mini bagels hard to find in whole wheat? I haven't even looked for them but think maybe it'd be a good thing to have around for my guys. I'm very sneakily trying to change their diets this year and they haven't had any bagels in a long time. Too bad I just came back from grocery shopping or I'd look this week. After the military commissary, two local stores and Costco I've had enough of looking at food! Keep feeling better! Molly

Mine are usually easy to find. They are the Thomas' brand. Think there is like 40carbs for the whole bagel, and usually I only eat half at a time.
