Like Cottage Cheese Panakes?
Charlie on the main board came up with an awesome idea.. I made them today and I love them.
Cinnamon Apple Cottage Cheese Pancakes!
Just put 1/2 of an apple peeled into a microwave safe dish. Toss with some lemon juice and then toss in a mixture of cinnamon and brown sugar twin (or splenda). Nuke for 30 mins in the microwave.
Add this to your hot skillet and pour pancake batter over top, flip. Top with SF maple syrup.. heaven!
Cottage Cheese Pancakes
Ingredients:
1 egg
¼ cup of low fat cottage cheese
2 tbsp of whole wheat flour
Optional ingredients:
Generous sprinkle of cinnamon
1 pkg of splenda/equal
1 dash of vanilla
1/3 cup of blueberries (set 10 aside)
SF maple syrup
Light whipping cream
Directions:
Mix all ingredients together except the 10 blueberries (if you are using them). Bring a skillet to med-high heat with pam cooking spray on it. Pour into hot skillet, flip once. Makes 2 pancakes. Add sf maple syrup and a squirt of light rhedi whip if you like, also top with the 10 blueberries you put aside. If you just want plain pancakes, make it with the first 3 ingredients only. Enjoy!

(this is for the egg, cottage cheese and flour, if you add syrup, blueberries or whipping cream you would need to add those additional stats). Using 1 serving of egg beaters instead of an egg would reduce the fat content and calories significantly (Cals 117, Fat 1, Carbs 12, Protein 15).
Wow, that sounds delicious! Can't wait to try it out next week on my day off.
BTW...I was looking for whole wheat pastry flour this week and never found any but I did find some light whole wheat flour. Can't wait to give it a try to see how it tastes. I was thinking of trying it out on the lemon bar recipe, what do you think? It is supposed to be a much lighter taste than regular whole wheat flour but just as healthy.
Pouchie is not happy right now...I had a frozen dinner for lunch today 'chicken korma' from the health food store. Only had 1 T of the rice portion of it and don't know whether it is the rice that hurts or the spices but my ulcer is screaming. It tasted good and the numbers weren't horrible but too owey to eat again. Too bad, it was fun trying a new cuisine.
Wow, light whole wheat flour eh? That is awesome! I wonder how it would taste, I bet it would be good! With all the splenda that goes into that crush prolli wouldn't be able to tell much if at all.
Sorry to hear your pouch is upset. I would imagine having an ulcer is really hard postop. Did you get it soon after your surgery?
Re-read this and have a question...30 minutes in the microwave? Is it chopped up or just the half apple? I was wondering if about one minute would do it. 30 seconds doesn't seem long enough and my microwave is 1000 watts.
If you did that with apple chunks it would be like an apple fritter. I suppose you could even go further and add a teaspoon or two of chopped nuts for real decadence. God bless whoever it was who invented and then shared the cottage cheese pancake recipe. For me it has been a real help in making my food plan comforting.
30 seconds.. wooops! I like them sorta firm yet soft if that makes any sense, certainly nuke them longer if you like them softer! Of course with the apple and flour in the pancake my blood sugar took a huge dive 2 hours later.. sigh, this is why I usually stick with berries for that reason right there.. argh, it was so good too.
