Looks a lot like the quiches I make.. just in a 9x13 pan.. we made it for Thanksgiving and it was a hit for all. I plan on making monkey bread to go with it for those that are naughty (not me!). Cough*husband*brother*Cough
You won't leave the table feeling guilty after eating this one and its very yummy..
12 eggs or equivilent in egg substitute (egg beaters)
4 oz chopped/diced ham
4 oz of morning star soy sausage crumbled.
8 oz package of 2% monteray jack shredded cheese
1 cup skim milk
1/2 green pepper diced
1/2 red pepper diced
1/4 cup red onion diced
1/2 cup broccoli florets chopped up
1/2 cup raw mushrooms
garlic powder (generous amount), salt and pepper to taste
Spray a 9x13 cassarole dish with pam. Mix all ingredients above together except for 4 oz of cheese. Pour into cassarole dish and then sprinkle remaining cheese on top. Bake for 30-45 minutes till browned on top in a 350 degree preheated oven.

Hi! Just have a minute to pop in here, missing everybody! Having a fun, busy weekend but I'll be glad to get back to a normal and comfortable routine after Christmas. I don't like being rushed like this, it makes me feel out of control of my eating and that is scary. Am purposely wearing my tiniest clothes to keep my food intake as sensible as possible while I'm not able to get it logged into sparkpeople. so far, so good!
Your recipe sounds yummy, I'll print it out for my files. For Christmas breakky I am making the family some cinnamon-swirl french toast and bacon. That earns a frowny face for sure but I'll have some cottage cheese pancakes for my own little treat.
