Splenda Gingerbread Cookie
Sorry...here I go again with more baking. In my defense...I just needed a legal cookie to eat this Christmas so I found a Splenda recipe to mess with. I took out the white flour and used some of my healthier flours and came up with a tasty cookie. Here's the link if you are brave:

You'll love it! *Just* sweet enough for us plain and would be perfectly fine for family members if you let them add their own frosting. I think it would be a really decadent treat with a nice hot beverage (I know, no eating with food but this would be a TREAT) and a whiff of whipped cream. Mmmm....

PS...there is even enough body to this dough that if you baked it a little longer and harder you could make a gingerbread house out of it!
Oh, yes please do post it! That sounds really great! Funny that a year ago I was baking every weekend before surgery because I was sure that I was giving it up and 'saying goodbye' to it. HA! It is more fun to bake now because it is a new challenge and so much fun to tinker with recipes to make things that are healthy for the whole family!
