My Family's Seven Layer Salad (making for turkey day!)
Hey there! Thought I would share my families famous 7 layer salad (much different than the normal one) and so good. I am going to substitute splenda for the sugar and and FF or light mayo and reduced fat/sodium bacon, low fat cheese for the regular. I have not tried it this way yet but I can't imagine it would be bad at all! Gonna try it this way this year for me!
Ingredients:
1 head of iceburg lettuce finely chopped (I am gonna use some romaine also)
1 head of cauliflower finely chopped
2 cups of mayo
1/2 to 3/4 of a reg sized red onion finely chopped (if u like more onion make it 3/4 cup)
1 lb of bacon
1/2 cup sugar
8 oz package of finely shredded cheddar cheese
Directions:
In a large bowl layer the above ingredients in that order except for the cheddar cheese. Do this the night before and cover and refrigerate. When it is time to serve add the cheese and toss all together.

I have made it with Splenda and Light Mayo for a while. I personally can not tell a difference at ALL. The one I make has peas in it but I am not a "pea person" so I might try this with the cauliflower...
Our first Thanksgiving after we were married I made this to take to my Uncles house and my dear HUSBAND of 1 month went to put it in the car and and I said do not hold by the lid and he did and we had 7 layer salad all over the back seat of the car. AMAZINGLY we are still married 20 years later
I am cooking this year for 16 and I did 7 layer salad last year so I think I am going to do a spinach salad this year.
