Cooking question...

Hi Molly! We must be in tune with eachother as I am lying there trying to go to sleep last night my mind was racing (I do that a lot..) what comes up... FOOD! Lol.. I was thinking about your chocolate pancake and crepe Ideas.. I then thought of these "blintz" things I used to order at a restaraunt in Kansas City. I remember them using ricotta cheese and strawberries together. I was thinking of making your crepe recipe with that sometime.. they make FF ricotta (sure it would up the cals) and then pureeing some fresh strawberries or blueberries into and some splenda and filling the crepes topping with light whipping creme and a few fresh berries.. yes your crepes sound marvelous! Fresh fruit alone would also be good or even some SF pudding.. have had those before too. Hello I am drooling, having cottage cheese pancakes or crepes or something this morning for sure! haha.. have a great weekend, I will try to post my eats for today before I leave.

thanks for the advice! i will probably try to do the pumpkin roll next week - but i'll report on the results. thanks for the advice on the pancakes - i'm going to make them again this weekend. hopefully i can get this down. in my former life i loved pancakes, and i want to be able to enjoy them again. thanks!! kerdeeya

After this discussion of pancakes, I had to make some for breakfast this morning. Tried it with brown rice flour today and yummy! Tastes much better than the whole wheat flour and holds together better than with soy flour. I've also tried it before with oat flour which is also yummy. Did you have some today? Molly
