I am not sure what you could substitute for pumpkin here.. Something with the same consistency as pumpkin.. let me think on that one.
I have made a basic cheesecake that is SF and FF that people love.
You take 2 low fat cream cheeses softened, 1 pkg of SF vanilla pudding and 1 cup milk (FF) and blend together, pour into a graham cracker crust and top with fresh fruit. I am actually unthawing one that I put blueberries and strawberries on top for the 4th of July today as my husband's out of town grandparents will be here today and he is diabetic so I thought it might be nice, hope it still tastes goood.
