Mexican Stew Anyone?
Today I threw a bunch of stuff in a crock pot guess I wasn't thinking that it would amount to more liquid then it did.. it ended up being a great stew fro my husband and I and I wanted to share what I did.
I put 3 lbs of frozen chicken in a big crock pot, covered it with a jar of salsa and 1/2 packet of taco seasoning. Then added the following:
1 can green chilies
1 fresh jalapeno diced up
few snips of fresh cilantro
1 can kidney beans
1 can black beans
1 onion chopped
1 can corn
1 can sliced black olives
1/2 block of cream cheese
once it was finished (6 hours on high) I pulled the chicken apart with forks and then ended up with a nice chicken stew. I loved it.

Melissa...Yummo! Sounds so good. I just finished a chili variation to you in another thread and here you are with this delish dish! Did you serve it over brown rice? About how many cals...fats..etc. 3 oz of cream cheese? Need to make this one soon. My guys have been asking for beef enchiladas, which I now make lower cal, but don't eat. The stew would be a hit! Honestly didn't figure out the calories, carbs, fats etc.. I just kinda threw it together (not like me!) I figured I ate about 4 oz chicken, 1/8 cup of beans, 1/8 cup of corn maybe a tablesoon of cream cheese, 3 olives total, 2 tablespoons of salsa.. all guesses. The other stuff is pretty noncaloric. I used a 1/2 block which is 4 oz of cream cheese, it does need this, makes the flavors really come together and gets it a tad creamy. mmm.
I "threw" something in the crockpot yesterday too.
I browned a pound of ground sirloin (would have used ground turkey but the beef was all I had), then added that to the crock pot with a can of black beans and a can of diced tomaotes. Then I browned some onions and garlic and threw that in... I added a can of green chili's and some cumin and cilantro and I chopped up some green olives with pimento and threw those in too. Oh and a couple of good dashes of tabasco...
It turned out GREAT and my guys loved it too. I made some rice for them to have with it. I will be having the left overs today for lunch.
As far as having a pouch made of steel... that is me too. I have not found anything I can not tolerate. NOTHING makes me dump. I am a bit sad about that, but I just know that I have to be extra diligent about my choices.
Back at my June check up the Dr asked me if I had "tested" things I shouldn't to make sure they wouldn't bother me. At that time I really hadn't and the way he said it seemed like a challenge to me... STUPID ME!!! So then I did test some things and I will say it again... NOTHING MAKES ME DUMP!!!!

Hey...This sounds good too....Just threw it together! My experiments end in the trash. As for personal confessions, savory foods have alway been my weekness so the Fall is ringing the dinner bell. The only thing that saves me is that I can't eat much for that 2 oz of any meat at one meal.
Trick or Treat: 'ween Mean Tip... If you WANT to dump, try buttercream icing or condensed sweetened milk. I would not if I were you, but figure it will trigger an explosion. LOL Ro

Well...I tried it and it's a hit so THANK YOU! DH was in the crockpot scooping out a bowlful. I omitted the olives, as they are not his favorite and added a bit of Stop & Shop Southwestern Salsa. Immediate Gratification on this recipe... DH said, "Wow!"
