PK's (RNY board) Protein Pumpkin Muffins
These are almost like extremely moist cake muffins, better than a dry one for us for sure. 2 is VERY filling, may just want to do one. I can eat two though. Here is the recipe!
Pumpkin Protein Muffin Pies
Ingredients:
22 Fl oz can pure pumpkin
6 scoops vanilla protein powder (mine has 130 cals, 23 protein per scoop)
12 oz can evaporated skim milk
6 large eggs
3/4 cup sugar twin brown sugar substitute
1 tbsp cinnamon
1/2 tsp ginger
1/4 tsp ground cloves
1/4 tsp nutmeg
Directions:
Preheat oven to 400. Mix sugar and spices in a small bowl, set aside. Lightly whip 6 eggs in a large bowl, add in pumpkin and mix thoroughly before sprinkling in sugar mix. Blend protein powder and milk in a separate bowl with a hand mixer, then add to the pumpkin bowl mixing well before filling 18 lightly greased muffin tins. Bake at 350 (yes bring the temp down from 400 to 350) for 10 minutes, reduce heat to 300 and cook for 40 - 50 minutes. Pies are cooked when a knife is inserted into the middle and comes out clean.
I actually got 19 muffins out of this. I did the breakdown on 18 of them.
Rounded out the cals are 84, fats 3, carbs 6, protein 12.
I put my fake frosting on them or you could use a squirt of light whipping cream. Delish!
Very good tip, if you overbake them they get really dry. I still love my batch, even though I seriousy overbaked them. The flavour is right 'on' for pumpkin and very satisfying!

Had to come back and check your post again for how many your batch made. I used silicone cupcake liners which are a little narrower than a standard muffin pan so mine made 24. I've been eating two and thinking I was being a pig but maybe not so much! Woohoo! Still, I've been using PK's Sparkpeople recipe calculation on calories so it is adding more than I'm actually eating which is a good thing. I'd much rather pad the calorie count than go the other direction. LOL

Mine made 19 filled ALL the way to the TOP, so it baked over some. So they are quite good sized, and yes, sigh I can eat two, with some cream cheese frosting on top but I am quite full when I am done and satisfied for hours. Love those buggers and I think with 18 (not 19) and using egg beaters mine come out to 86 cals a piece! Can't be the protein load in these things, the yummy taste for the calories! They will be a staple in my deit for sure along with your bars. Always and forever I am thinking lol... i never get sick of pumpkin, its a fav of mine.
