Millet Protein Cake
You are rolling your eyes and thinking, oh no here she goes again with another recipe. :groan: LOL In my defense...I just want to reduce the amount of carbs and calories in those protein bars so I tinkered with it another time. The results are odd, I'll admit. But this is cheap enough to make...the bag of millet cereal only cost $1.86 at a fancy-expensive health food store here. It is all the same stuff as the regular protein bar recipe except I omitted the flax seed this time and those two changes really brought the calories down.
I think it was too sweet with the 1/4 cup Splenda but you could omit it or use any other sweetener you prefer and it'd be fine, I'm sure. This is a totally different texture from the other recipe and a lot more like a little piece of sponge cake than a protein bar. I topped mine with some 'maple frosting' (Melissa's ff cream cheese topping flavoured with mapleine, vanilla extract, butter flavouring and splenda) and it was a lovely sweet little treat.

Molly...Great numbers on this recipe and it does sound yummy! Do you feel that this is more dessert or protein bar? I think that I'd probably try it with some grilled fruit and SF Cool Whip. The family really likes Angel Cake and Louisianna Crunch Cake so this would be an easy substitute for my guys. Thanks. Ro
Ro, it wasn't as heavy as the other protein bars and I don't think it would do as a meal substitute unless you added the ff cream cheese topping. If you cut it smaller the numbers would be even better for a dessert.
All over town here the coffee houses are advertising their fall drinks *and* pumpkin spice donuts. One more fall food that I want to try to recreate in a safe product. That is the next challenge, I think. I have one of those cute mini bundt muffin pans and I was thinking if I took a basic pumpkin muffin recipe (one of the sf ones from sparkpeople prob.) and baked it in that pan it would come out sort of a donut shape.
DH is on the warpath again tonight, this time about the house and all our construction projects so I won't have much time to bake this weekend. Looks like I need to be painting and cutting moldings. No fun time!

Hi, Molly When is your cookbook coming out? Pumpkin spice "donuts" sound so good.
So much emphasis is placed on protein after WLS, which is extremely important, but having healthy substitutes for the foods that we crave is probably a key component to not regaining the weight again. BTW I not certain about this (memory loss) but I think that the nutritionist on the Diet & Nut board said that flax could coat the intestine and that some Rx might not get totally absorbed.
Warpath...been there with Ex-DH! Funny thing...in the end...he dumped me, after I tried to get everything done to his liking. I "picked" my Love this time...with a check list! It's worked out much better for me with a few bumps in the road, instead of #1's boulders and blow-ups. Life's too short to not have fun. My analogies are that we are all "Dixie Cups" that get thrown-out, if we don't take care of ourselves first AND that life IS a "one-ticket ride" so plan to have fun! ..."These are the good, old days"...

Thank you for the heads up on that Ro, I will have to go over there and remember to look for that information. Flax is supposed to be so very good for us all but it is high in calories so I don't add it to a lot of things.
Love your comment about the check list. I always tease my daughter that her checklist for a husband has to be very selective!
