Melissa's Cottage Cheese WAFFLES
Oh yum...today being a day off I got up late (7 a.m.---wow!) and made breakfast for the family. Since the waffle iron was hot I decided to try Melissa's cottage cheese pancake recipe as a waffle thinking that if it was awful I could throw it out and just make pancakes instead. Instead of the 2 tab. flour in the recipe I used 1 tab. soy protein powder and 1 tab. oat flour (that 'avoiding wheat' thing again). It actually turned out! One batch just about filled my belgian waffle iron and actually rose up into the grooves. Yippeee! I took a picture and will try to get some food porn posted this weekend.
For my special treat brekky I had half the waffle, 1 ounce turkey breakfast sausage, 2 tablespoons faux pumpkin butter (applesauce, canned pumpkin,splenda, a little pecans, pumpkin pie spice cooked and run in the blender) and two squirts sf whipped topping. Oh and for decadence, about a tablespoon of my Steel's maple syrup. It looked like a restaurant plate!

ps...Now I'm drinking a caramel apple latte. SF green apple syrup, sf caramel syrup, splenda, ff vanilla soymilk, decaf espresso. Nummy!
Wow! My mouth was watering with the waffle description, then it was a full drool with the pumpkin butter description... mmmmm! The waffle idea sounds really great. So does the caramel apple latte - I just love fall.
I saw some SF pomegrante syrup yesterday, but I didnt buy it because I have no idea what I would do with it besides martinis - any suggestions from you Molly, the expert chef and baker??????? Thanks for your help. And if you want a bottle I will ship it to you, just let me know. Rebecca

I'd try the standards first: a pomegranite protein shake, pomegranite latte and topping some of Melissa's cottage cheese pancakes (or waffles!). That recipe is also great thinned out and made into crepes. From there you could fill it with some ff ricotta and run the pomegranite syrup over that. Or maybe just a half cup of ff cottage cheese or fage yogurt and syrup. In summer I'd try it over shaved ice too.
Uh oh...I'm getting ahead of myself! This was a Splenda product? Hope so!!!
Going to have some willpower and push away from this computer and get to work in the house. Days off are few and far between. I have a lot of chores to get done!!!

You got me going, Rebecca! I made a run to the Cash n Carry store here to see if they had that syrup...no. But I did get a bottle of sf 'Pancake' and sf 'Gingerbread'. Plus...a big bottle of Torani sf caramel coffee syrup. The thick, gooey stuff! It is a huge bottle, I will have to share it with my daughter. This place sells foodservice stuff, there's no way i need a bottle that big. LOL
Review on the Pancake...a very weak maple flavour with a hint of butter in it. Would be ok in the protein bar recipe but I can't see much use for it in coffee or on pancakes. Glad it was under $4. I love DaVinci syrups but really can't recommend this one, sorry.
Review on the Gingerbread...not as strong as I was afraid it would be. Very pleasant and will be good in nice warm lattes and my wintertime hot protein drink. Might also make a nice protein bar.
May have to buy another freezer for all these protein bar batches!
