I made mine with Amaretto coffee syrup because that's what I had but almond would be just as good. Also, I omitted the anise flavouring because I wanted to see how it comes out without it the first time but if you wanted more of a true Italian biscotti flavour I'd recommend adding it.
This was very satisfying and maybe too tasty. I ate two of them! After adding the quarter cup of Splenda to this batch I can see that I should amend the other protein bar recipes to include it too. It just tastes sweeter and more balanced. But, that could just be a matter of personal taste. I have noticed that over the months my tastebuds have become more adjusted to artificial sweeteners and I seem to want things that taste sweeter every month. Must be time to be cutting back on them, but then I won't be having as many sweets in general now that fruit season is coming to a close.
Hope you like them. My batch is going to get buried deep in the freezer and saved for the holidays.

Sounds way delicious!!!!! I can't wait to try them! What do u think about making an actual Maple protein bar? PK says she has maple syrup sweetened with splenda and no sugar alchohols she got at walmart! I can't find that! I would love to make a maple bar and have the maple topping.. so yum im sure!
She has a terriffic idea! I haven't ever bought those syrups because I have that Steel's syrup I ordered from bariatric eating. Now I need to! Wouldn't that taste good along with maple flavouring too? Sounds so yummy!
About how much Splenda do you add in your bars? In the biscotti i used 1/4 cup and think it was good...do you think that amout would be right for the regular protein bars? I hate to make anything too sweet since my taste buds are so easily getting readjusted to liking sweet foods. Sort of worries me...

I think a maple bar would be delish! I put the tablespoon of brown sugar twin that your original recipe called for but I also think it needs more sweetness and will do 1/4 cup next time.. Actually I think I wil do 1/8 cup brown sugar twin and 1/8 cup white splenda. I know our tastebuds prolli are changing some I find myself the same way however.. those bars do need a bit sweeter taste which is why I think I added the "topping" to it not realizing I was looking for a bit more sweetness. I think its fine no worries.. as time goes our taste buds will prolli keep changing a bit but I am not giving in to sugar, I refuse. Being diabetic preop and not wanting to take that plunge to find out if I dump keeps me focused. I just don't wanna know that I do not dump.
You know what...that is what is wrong with the chocolate banana bars! I didn't add the extra sweetener like I did with the pumpkin bars. :smacking head: Gonna go right back to those recipes and add the splenda. duh... LOL!
Man, I am in such a freakin' GOOD MOOD TODAY!!! Last night was support group and my surgeon spoke to the group. W O W !!! He is a good speaker and had such a fascinating take on this whole dieting mentality and the way our society has evolved around food yet our bodies remain the same biologically that they were generations ago. He boiled it down to the fact that exercising *daily* is not abnormal (even though society now looks at it that way) and you can't go wrong with a diet of eating pretty much anything that your ancestors would recognize as food. Which means nothing weirdly processed...white flours, etc. He had some funny photos, good slides, interesting study data. I was even more impressed with him than I already was. Afterwards I asked him if he'd consider putting his 'talks' on a dvd or tape for his patients to purchase and suggested the proceeds could even be a charity donation of his choosing. Hope he'll consider it!
Sorry to be so wordy. I think I'll go put on some Christmas music now and start getting things DONE around here! It is so rare to be in my own home without the kids or hubby underfoot (he is outside with a pal working on our fence). I'm just grateful today to feel good, to have a home and a day off work!

Hey Molly, enjoy your beautiful day! I would have loved to hear what your doctor said. I for the most part don't eat hardly any processed foods.. once in a while I will nook a precooked frozen chicken breast but that's about it or some deli meat ok or black bean burger butt MOST of my foods aren't "processed" and I feel so much better eating that way. Nothing more fulfilling t me than a meal of grilled meat and veggies.. its my fav! Have a good day Molly!
