What did ya eat today? - Tuesday

Hi, Everyone...I snacked a lot today, but my numbers are still in an OK range. Calories: 964, Carbs: 108, Fats: 28, Protein: 79 I tried the SparkRecipe for Salsa Chicken, which was very good. As I don't have a crockpot, I baked 6 boneless chicken breasts (that had been sprinkled with a 40% reduced sodium taco pack, then topped with a mixture of 1 jar of Newman's medium salsa, 1 can Campbell's reduced fat cream of mushroom soup, 1/2 can of water) covered with foil at 350 degrees for 1 hour. The crockpot version is a bit different and light sour cream is added after cooking. It probably tastes great. We really liked the baked chicken, serving it with the light sour cream mixed into part of the sauce so that we'd have some spicy sauce and some creamy sauce. Sides were rice, refried beans, and corn. This SparkRecipe had a lot of good reviews and many cooks adapted the recipe to what they had on hand. My Review: Worth Trying! Ro

OK....here it goes....watching closely everything that goes in my mouth. B: PButter Protein Bar S: Egg Casserole (melissa's quiche) L: 1/2 c Tuna Salad S: soy protein D: 4oz grilled chicken salad S: carb control Yogurt Calories: 831 Fat 34 Carbs 30 Protein 101 PLUS in effort to get to my mini goal--i did 30 minutes of interval training! 2 miles.....
