Hello.. tomorow is hump day.. amazing how fast the weeks go anymore. Soon it will be Christmas! I have already started shopping! Have you? B: Frosty Spicy Chai Protein Shake (140 cals, 26 proteins) L: 1 cup homeade chili with 2 crackers (226 cals, 20 proteins). S: Decaff, SF, homeade pumpkin latte using light vanilla soy milk with light whipping cream sprinkle of nutmeg (80 cals, 6 proteins) D: meat crust pizza and side salad with romaine and FF italian dressing (235 cals, 15 proteins) S: Pumpkin protein bar with 1 tbsp of FF/SF cream cheese 'frosting' (201 cals, 18 proteins) S: EAS Caramel Cafe Protein Shake (if I don't fall asleep before this) Cals 1030, Fats 30, Carbs 69, Protein 110.

Hi Melissa, Wow, I hear ya on how quickly the weeks pass! And yes I HAVE been Christmas shopping. All year long so far! I may even start wrapping soon but then I run the risk of forgetting what I bought. Pouchie was so nice to me today. Must have been a little swollen inside and she didn't want a whole lot added. Kisses, kisses!!! Wish every day could be like this: 1) Frosty Pumpkin Pie Spice Protein Latte (ohhh, yummy!!!) 2) diet yogurt, 1/2 cup kashi go lean 3) half a Power Crunch bar 4) a tiny amount of my prepped lunch salad and half of a PK's pumpkin muffin w/sf whipped cream --finished off the pumpkin muffin when I got home --nonfat soy latte (WHITE COFFEE...someone kick my butt!) so far: cal: 814, carbs: 45, fats: 25, prot. 81 Later am going to eat two Costco turkey pepper sticks (only 80 cal for two of them!) an may have a cup of vegetarian chili for dinner. We'll see...it is cold and really fallish feeling here. Soup sounds good. Dunno...

1. english muffin w/1 tablespoon light strawberry cream cheese 2 cups coffee w/creamer 2. 2 oz tuna 2 WASA crackers 1/2 cup cucumbers 3. Atkins PB morning bar 4. 2 hershey kisses 2 sf jellos 5. 3 oz fish 1/2 cup cucumber 6. 1 bite of my sons cupcake totals w/out cupcake bite 697 calories 77 carbs 23 fat 50 protein

I'm supposed to be 1000 -1200 calories and 150 carbs. Today was a little low so I just had a protein shake too. The numbers are now: Calories 872 85 carbs 28 fats 75 protein

Ah I was just wondering, some people do only get in 600-800 this late out and I wonder how they do it! Wow 150 carbs is generous, wish I could eat more and not feel so guilty about it. My downfall for sure!

I try to stay closer to 60 on the carbs, but somedays I get closer to 100. Sometimes the carbs help me feel fuller.

Hi All! Need your baking advice please... I made pumpkin protein bars on Sunday, they are really good! The whole house smelled delicious, the family was impressed. I added nuts and used SF cinnamon dolce syrup. THey are very dense and chewy but not soft or hard exactly - I think may need some splenda next time - maybe I cooked them too long? Maybe eggs were not stiff enough? Need your cooking advice!!!! I also made Melissa's special cream cheese frosting and sliced the bars in half and put the spread in the middle so the bars are portable and frosting doesnt get all over. Tastes really good!!! Thank you!!!

That sounds like them.. not soft or hard but chewy. They are different consistency that is for sure. I bet you cooked them fine!! I did use brown sugar twin instead of the blend and will add more next time maybe 3 tbsp instead of 1. Good idea with the frosting!

Love your idea of putting the 'frosting' in the middle! Cool! I second what Melissa said...you probably did it just right. Dense and chewy. It is such a good basic recipe that you can personalize to your own taste buds. So much better than a chemical laden, store bought bar! Think of all the variations too: change out the fruit juice, change out the flavour of protein powder, change out the puree'd fruit (applesauce, mashed bananas, pumpkin, babyfood prunes...whatever!), change out the sugar free syrup and of course the baking extract. Your imagination is completely in control. I even made a batch where the fruit was mashed banana and added a half cup of cocoa powder. Made it nice and dark! I may add some dried fruit to another batch such as cranberries, cherries or blueberries. Maybe some mini chocolate chips? Sorry...guess thinking about baking gets me too excited. hahaha Molly
